How Do You Make Bread Pudding

Bread pudding is really a simple recipe. You only need a few ingredients to make a simple bread pudding such as milk, cream, eggs, sugar and some spices.

  • You cut your bread, usually a day old loaf of something such as French bread which is what we like to use but have also used challah.
  • Then you whisk together the milk/cream, eggs and spices and pour it over the bread and let it soak for about 20 minutes.
  • There are some recipes where you have the bread soak overnight, but I dont have that much patience so I never make those kids of recipes usually and just try to soak my bread long enough to let the milk and egg absorb so it adheres together when baked.
  • You then pour everything into a baking dish and bake it at 350 degrees for about 1 hour until its just jiggly. You dont want it to be super lose or anything in the middle, you want those eggs to bake and make everything nice and stuck together.

How To Make Magnolia Bakerys Banana Pudding:

  • In a large mixing bowl, beat together the sweetened condensed milk and water until well combined about 1 minute. Add the vanilla pudding mix and beat well about 2 minutes. Cover and refrigerate for 3-4 hours or overnight. It is very important to allow the proper amount of time for the pudding mixture to set. It will be watery if you dont let it set up long enough.
  • In a large bowl, whip the heavy cream with an electric mixer or a stand mixer with the whisk attachment until stiff peaks form. Gently fold the fresh whipped cream into the pudding mixture until no streaks of pudding remain.
  • Dessert can either be made in individual portions or in a large glass bowl.
  • To assemble dessert, select a large wide glass bowl or trifle bowl with 4-5 quart capacity.
  • Arrange 1/3 of the Nilla wafers covering the bottom, overlapping if necessary. Next, layer 1/3 of the bananas, and 1/3 of the pudding mixture. Repeat twice more, garnishing with additional wafers or wafer crumbs on the top layer. Cover tightly with plastic wrap and allow to chill in the fridge for at least 4 hours or up to 8 hours, no longer .

Adding Cornstarch: The Step By Step Process

Almost any type of edible starch can be used to thicken up banana pudding, provided you didnt add banana slices in it quite yet. Corn starch is the most popular option. However, most people dont understand how to do it properly.

Its important to understand something about starch: you cant just add it in and expect your pudding to thicken up as its supposed to. Cornstarch will require you to heat it up in order for it to thicken. Heres how you can add cornstarch properly:

  • Mix equal parts cornstarch and water.
  • Add in a small amount of the cornstarch-water mix at a time. Stir gently, making sure the starch is moved evenly throughout the pudding.
  • Get your banana pudding to heat up to a simmer. Keep it there for 20 to 30 seconds, stirring gently.
  • Drop the temperature of the pudding, and finish stirring things up. It should be done by now.
  • Why Did My Bananas Turn Brown

    Banana Bread Pudding Recipe

If you do not use your bananas right away, they will often end up brown, even when they are still peeled. Just like apples, bananas have a hormone called ethylene that lets the banana continue to ripen after it is harvested from the tree.

The inner flesh will brown even faster after being peeled. As long as you keep them away from the air, they should last for a day or two in the pudding.

    Banana Bread Pudding.

Sometimes, its not actually a matter of getting the banana pudding to be thicker. Rather, sometimes you want the pudding to be able to gelatinize into a mold. This is actually fairly easy to do.

After youve mixed your pudding, add flavor-free gelatin to the pudding youve made. Then, stir it up, pour it into the mold that you want to use, and chill it for several hours.

    What Is Bread Pudding

Bread pudding is a combination of bread, custard, and spices. It can be sweet or savory, but I like it sweet.

Leftover or stale bread is used as the base of bread pudding to soak up the creamy custard. It transforms bland loaves into a rich, sweet, and spiced dessert.

This warm dessert has a velvety texture and is typically baked to create a souffle-like result in a large casserole pan or individual ramekins. I simplified it for this version by using my slow cooker.

This is the beauty of this recipe, it can be served either way. I like to have my bread pudding served warm, usually because I make a warm sauce that drizzles over the top. But cold is also good and a lot of people choose to eat it that way. It is more or less personal preference.

How Do You Make Bread Pudding In The Slow Cooker

When making banana bread pudding in the slow cooker, I start by toasting the bread cubes in the oven before adding them to the slow cooker insert.

The process only takes about 30 minutes. Toasting the cubed bread in the oven removes some of the excess moisture, which allows more of the sweet custard to be absorbed. This results in a creamy, rather than mushy, texture for the finished product.

The custard is a combination of eggs, half-and-half, granulated and brown sugar, vanilla, cinnamon, nutmeg, and salt. I add in a cup of ripe, mashed bananas it adds a wonderful fruity flavor to the pudding.

The bread and custard are then soaked for at least an hour before cooking. The bread pudding can be cooked at either low or high setting, until the center puffs up and reaches about 175oF.

Whats The Best Bread For Bread Pudding

Use day-old or two-day-old French bread. Perfectly fresh bread will turn too mushy after its coated in eggs and milk. This is one of those rare times where you want dry bread. Another time is making Thanksgiving stuffing.

A tip to encourage the bread to dry out faster is to slice it into 1-inch cubes and place them on a baking sheet overnight, exposed to air, for 12 hours or so.

If youre more of a pro in the kitchen and are comfortable drying it out in a low, 200F oven, flipping and turning the cubes every 15 minutes or so until its dry, but not toasted, go for it. My worry is that people will actually toast the bread rather than just drying it out so use this method with caution. Leaving it out, exposed to air for 12 hours is much simpler and much more foolproof.

    SUBSTITUTIONS AND ADDITIONS

BREAD: The best bread for bread pudding is stale bread. We recommend using stale bread because the dry bread chunks will soak up the liquid so much better than fresh bread, giving it the best flavor. If you dont have French bread, you can use day-old sourdough bread, croissants, challah, or Italian bread instead as a few excellent choices.

RAISINS: A quarter cup of raisins would make a tasty addition to this great recipe.

CHOCOLATE CHIPS: Why not sprinkle a handful of chocolate chips or mini chocolate chips on top of your delicious banana bread pudding?

    • Have leftovers? Keep your pudding in the fridge in an airtight container for up to 4 days.

Banana bread pudding is a decadent dessert that is ready in under an hour. The glaze takes it over the top and makes it one that you will want to make over and over again.

How Many Layers Should I Make

For the authentic Magnolia Bakery banana pudding recipe, you should have two layers. However, you can make more layers if you want. Try pudding, then cookies, then bananas three times, or mix it up and do the cookies or bananas first. Just make sure you cover the bananas so the air cannot get to them and turn them brown.

    The Best Banana Bread

Bananas are one of those love-it-or-hate-it fruits, and I happen to love it.

However.. I only like bananas if theyre a certain texture and ripeness.

Those bananas that are just a little too spotty and are softer are no bueno. They make the mashiest noises when you eat them, and those mashy noises are basically the fruit-eating version of nails on a chalkboard. But bananas that are bright yellow with nary a spot in sight are just perfect. I love slicing them up on yogurt parfaits, eating them plain, chocolate dipping them, or throwing them into smoothies.

But did you know that the darker the banana, the better the bread? Not only are darker bananas easier to mash but they have more sweetness and are absolutely perfect for baking banana bread. So as much as I hate it, I usually let my bananas get spotty and dark brown before I mash em up and toss them in this banana bread. Which, by the way, is the best. No, seriously.

Most bananas breads Ive tried are way too crumbly and dry, which is basically a disgrace to carbohydrate-y products everywhere. Carbs should be soft and tender, not crumble at the mere touch. That, or the banana flavor isnt really there. Or the bread isnt spiced well, giving kind of a bland flavor and texture. I guess you could say Im well versed in eating terrible banana breads. I consider it a lifes accomplishment.

No matter your preference, you MUST make this bread! I promise, itll be your new favorite in no time!
