Alright, ladys and gents heres the tea, this test was hard. There were a couple brands that I actually had to spit out they were that bad, and honestly, I kinda dont like cornbread as much as I use to .

Only bread made with gluten-free flours and grains is gluten free. Bread made with wheat, barley, spelt, or rye contains gluten. Some ancient grains such as einkorn contain less gluten than modern wheat varieties, but breads made with those grains still contain gluten. Only breads with non-gluten flours, such as buckwheat, sorghum, amaranth, teff, and brown rice, are gluten free.

I reviewed the plainest variety of each bread I could find. In most cases, thats the white bread variety. Sometimes, the whole grain variety was the one I could get my hands on fastest.

Since this cornbread is made to be moist and soft, itâs best to store any leftovers airtight so it doesnât dry out.
I store mine at room temperature:

I Was Told It Couldnt Be Done
These are bold claims. And lets be clear there are those who said it couldnt be done. Give up on the bread maker I was told They are utterly pointless when it comes to making gluten free bread
To be fair, there are some revolting-looking specimens across the internet pertaining to be bread. You know the images The texture that looks brittle, hard, inflexible, flat-topped, mouse-nibbled, with the tell-tale crumb that looks nothing like bread. I am quite shocked that appliance companies in particular, have promoted the publication of some such unappetising recipes as show-casing what a GF bread maker can do.
But maybe Im guilty too My early loaves look a little similar. Although better than many out there, even my previous gluten free breadmaker brown breadhas the signs. It makes amazing toast, but honestly? We can and should expect better!

Can I Freeze It

You can easily freeze this moist and sweet cornbread! Freeze the entire pan, baked and cooled, then wrapped in plastic wrap and foil.

Also, freeze individual squares . Wrap the same as above.
To thaw, leave the cornbread wrapped, at room temperature for several hours. The bigger the piece the longer it will take.
To reheat, you must unwrap, and remove the plastic. You can wrap it again in just foil and heat it in a 350úF oven for 10 to 15 minutes.

Before jumping in to gluten free flours, its helpful to know what gluten really does in baking so substituting for it is easier. The strange thing is, fresh milled wheat flour does not contain gluten. Thats right there is no gluten in the flour itself. What creates the gluten is when two proteins, glutenin and gliadin, come into contact with a liquid.
When those two proteins are combined with water or any liquid, gluten molecules begin developing. They will multiply, resulting in dough with that doughy texture. The more liquid is added, the more elasticity the dough will have.
