Theres a reason why fathead pizza dough is so popular among keto dieters. Its very simple to prepare, and the texture is almost identical to that of real pizza!
Trying To Maintain A Gluten
- Going Gluten Free: Cutting out gluten, a protein found in grains like wheat, rye or barley, is truly beneficial only to some. If you are healthy, it may even carry risks.
- Gluten-Free Bread: Are gluten-free loaves more nutritious than their wheat-based counterparts? It depends on your individual circumstances.
A third, much less common wheat-related condition is a wheat allergy, which can cause allergic reactions like diarrhea, vomiting, facial swelling or difficulty breathing within minutes to hours after eating wheat.
If you have celiac disease, wheat sensitivity or a wheat allergy, going with a gluten-free bread is clearly the better choice. But in a 2017 survey of 1,000 people in the United States and Canada who purchased gluten-free groceries conducted by the food and beverage ingredient supplier Ingredion 46 percent said they bought those products for reasons other than a medical condition. Among their top motivations: wanting to reduce inflammation or consume fewer artificial ingredients, believing that gluten-free products were healthier or more natural, and thinking that such products would help with weight loss.
However, none of these beliefs are true, said Anne R. Lee, a registered dietitian and an assistant professor of nutritional medicine at the Celiac Disease Center at Columbia University Medical Center. Typically, the gluten-free products are higher in fat, higher in sugar, higher in salt and lower in fiber and your B vitamins and iron, she said.

The Secret To Easy Low Carb Gluten
To be honest, I didnt expect the first version of this easy almond flour bread to make it to the blog. It was mostly just for the family, and I planned to make several versions before sharing it. But when my husband asked me why I bought real bread, I realized this was one to share right away!
Almond flour on its own tends to be a bit crumbly. Thats perfect for biscuits and cakes, but a sturdier low carb bread loaf is better for sandwiches. It doesnt have the gluten that wheat flour has to make breads chewy and sturdy.
So, whats the secret to a real-bread-like texture? Psyllium husk powder!
If you havent heard of it before, psyllium is a type of fiber from the plantago ovata plants seeds. Its often used in fiber supplements. In keto baking, it helps create a chewy texture and also makes low carb gluten-free bread recipes more sturdy.
But if you use too much psyllium, the end result can be gummy. The good news is that my close to no carb bread recipe doesnt require a lot of psyllium husk powder. I used only 1/4 cup for the entire loaf, compared to 2 cups of almond flour.
The psyllium husk powder transformed what would be a crumbly almond flour bread into sturdy slices that can stand up to sandwiches and spreading just about anything.
You may even be able to reduce the amount to 2-3 tablespoons, which Ill try next time. Youll want to reduce the water a bit if you do that.

Does Gluten Consumption Impact Health Negatively
Why avoid gluten? People with Celiac disease must cut out gluten to avoid symptoms of diarrhea, bloating, gas, and fatigue, as well as longer-term complications of anemia, osteoporosis, and damage to the lining of the small intestine.
Those who run to the restroom after eating gluten and donât test positive for Celiac disease may have Non-Celiac Gluten Sensitivity , an inflammatory disorder with gastrointestinal issues similar to irritable bowel syndrome. Itâs harder to test for NCGS than Celiac or a wheat allergy, as no specific clinical biomarkers are present .
Most people who suspect theyâre sensitive to gluten try elimination diets that remove gluten for a period of time before adding it back in to see if symptoms return.
Even people who donât experience severe or moderate reactions to gluten or wheat may avoid it because they believe gluten is unhealthy. Many proponents of gluten-free diets or grain-free, low-carb eating plans suggest that gluten triggers inflammation, autoimmune diseases, and changes to the gut microbiome .
Some data suggest that following a gluten-free diet may help alleviate gastrointestinal symptoms in people with skin conditions, arthritis, irritable bowel syndrome, type 1 diabetes, and neurologic disorders. But, research identifies few benefits to eating gluten-free for healthy people without gluten intolerant disorders or disease.

Is Sourdough Bread Better For Gluten Intolerance
Regular sourdough bread made with wheat flour is usually better for those who have a hard time digesting gluten. Some people who have difficulty with wheat/bread can tolerate sourdough that has been long fermented. Those with celiac disease still cannot have any wheat whatsoever, so sourdough bread will have to be gluten free sourdough bread.
Is Gluten Free The Same As Plant Based
The terms gluten free and plant based are often used together but they have very different meanings. Gluten free foods do not contain gluten. Plant based foods are made from mostly plant ingredients.
Some gluten free foods are also plant based. Examples include nuts, seeds, oils, and non-starchy vegetables, fruits, starchy vegetables, beans, and legumes.
Some gluten free foods are not plant based. Examples include dairy products, eggs, seafood, meat, and poultry.

Comparing The Nutritional Value Of Gluten Free Bread And Wheat Bread
Despite the growing number of gluten free breads now available, gluten free bread still hasnt managed to replicate the taste, texture and nutritional qualities of bread made from wheat.
Why cant gluten free bread be more like wheat bread? Because gluten is the key to most of the properties that make wheat bread so popular. Replicating these properties in gluten free bread means using several kinds of flour and additional ingredients. This also means differences in the nutritional value found in gluten free bread compared with gluten containing bread. To find out what you get when you eat gluten free bread, we compared two supermarket home-brand white sliced loaves and two supermarket home-brand gluten free white sliced loaves.
Lets imagine that two people well call them Amelia and Jack are making sandwiches for lunch with white sliced bread. Jack is on a strict gluten free diet. Amelia can eat gluten.
Amelia is already ahead on price. She only had to pay $1.40 for a standard 650 gram loaf compared to Jack paying $4.50 for a 525 gram loaf. See Cost of a Gluten Free Diet.
When Jack eats two slices of gluten free bread, hes actually eating more bread and more calories of energy than Amelia. A slice of gluten free bread is thicker than a gluten containing slice. Its also likely to be around one-third heavier. In other words, three slices of gluten free bread weighs the same as four slices of wheat bread.
So, what can you do right now?

Calories Vary From Slice To Slice
Whether you like whole grain or a specific brand, the number of calories in a slice of gluten-free bread varies. One slice contains as little as 65 calories or as much as 100 calories. By comparison, one slice of whole wheat bread typically contains about 80 calories. If youre concerned about calories and weight, you may need to shop around until you find a brand that fits your calorie needs.
Cookies: Aleia’s Vs Pamela’s Vs Chips Ahoy
Aleia’s Gluten-Free Chocolate Chip Cookies contain:
- 15 grams of carbs
- 0 grams of fiber
The same serving of Pamela’s Chunky Chocolate Chip Cookies contains:
- Less than one gram of fiber
A 28-gram serving of Betty Crocker Chocolate Chip cookie mix contains:
- 21 grams of carbs
- Less than 1 gram of fiber
The Bottom Line: When it comes to chocolate chip cookies, the gluten-free store-bought varieties may contain more calories and fat than the gluten-filled brands, but the reverse is true for cookie mixes. If calories and fat are a concern, you may need to make your own.

How To Make Low Carb Bread With Almond Flour
This almond bread recipe is super easy! Just a few easy steps:

- Add wet ingredients. Add the eggs, melted coconut oil, and warm water.
TIP: Mix well here to create air bubbles! This will help your bread rise.
- Bake. Transfer the batter to the baking pan, round out the top, and bake until the top is crusty and an inserted toothpick comes out clean.
TIP: It will pass the toothpick test before its completely done, so make sure the top is very crusty, too.
Let your keto almond bread cool completely before slicing it, which will allow it to set inside.

Gluten Free Does Not Necessarily Mean Healthier
Despite the health claims for eating gluten-free, no scientific evidence supports weight loss with a gluten-free diet or suggests that the general population would benefit from avoiding gluten for health reasons.20
Although many people think that a gluten-free diet is healthier and more nutritious, the opposite may be true, as many products marketed as gluten-free are highly processed.
These gluten-free foods are often made with refined grains and additives such as tapioca starch, less commonly fortified with folic acid and iron, and have less fiber and more sugar compared to regular gluten-containing foods.21
In fact, several studies have actually found a tendency toward weight gain and obesity among those who follow a gluten-free diet.22
In addition, highly-processed gluten-free diets that are high in refined carbohydrates are often deficient in important nutrients such as iron, zinc, vitamin D, and protein.
We suspect that these drawbacks would be significantly attenuated by eating a whole-foods, minimally processed gluten-free diet.
Dont Miss: What Foods Are Gluten Free
What Is Gluten Exactly
Gluten is the protein found in wheat, barley, rye, and some oats. Gluten is found in the wheat varieties of spelt, kamut, farrow, durum, bulgur, triticale and semolina.
A myriad of foods contain gluten, such as baked goods, crackers, cereals, bread, and pasta. Gluten is often a hidden ingredient in foods.
Think of gluten as a glue. Its main job is to allow food to maintain its shape by keeping it held together like glue .
Celiac Disease is an autoimmune digestive disorder that is triggered by the consumption of gluten-containing foods . This disease can cause long-term damage to the small intestine.
You may have non-celiac gluten sensitivity or a wheat allergy, where consuming gluten-containing foods will also trigger symptoms for your body without long-term intestinal damage.
For people with celiac disease, gluten sensitivity or wheat allergy, following a gluten-free diet is the treatment needed to sustain a healed and healthy digestive system.

Should I Avoid Gluten Or Eat Gluten
The trend of individuals reducing or eliminating gluten from their diets is increasing worldwide.18
Although a gluten-free diet is a necessity for people with celiac disease and recommended for those with gluten intolerance, people without diagnosed gluten issues are also excluding it from their diets because they believe it healthier to do so.
Many claim to lose weight or experience other improvements in health when cutting out gluten, but there is no solid evidence to support this strategy.19

This low carb bread recipe with almond flour came about somewhat by accident during my Sunday keto meal planning. Lately Ive been making the flattened version of my 4-ingredient almond flour biscuits to use for sandwiches each week, but since Ive been wanting to create a keto almond flour bread recipe, last weekend I decided to attempt that instead.
This is one of the closest ways Ive come to a carb-free bread or carbless bread. Technically, cloud bread is lower in carbs, but the texture is much further from real bread. My white keto bread recipe is also lower in carbs , but that one is more like a fluffy white instead of a classic wheat. That one is more light, while this low carb gluten-free bread is chewy and similar to wheat bread. You can also make coconut flour bread without any almond flour at all or for a sweeter almond flour loaf, make almond flour zucchini bread. Just depends on what youre going for!
This low carb gluten-free bread post was originally published on March 13, 2017 and the post was republished in December 2020 to add useful tips and answer common questions. Its still the same delicious keto almond bread recipe that has been popular for years!
