Is there anything more comforting than homemade banana bread? Not to me. Happiness is slicing into a warm loaf of banana bread, fresh out of the oven.

I have a plethora of bananas in my freezer at all times, probably because I like buying those big bundles of bananas at the grocery store and can never eat them fast enough. Im very picky when it comes to bananas they need to be perfectly ripe, otherwise I wont eat them. I like them when they just turn from green to yellow, when theyre still a little tangy. Once the skin starts to brown and they go softno thanks. I stick them in my freezer instead so Im always able to whip up some banana bread when Im craving it.

Which is often, especially at a time like this when the seasons start to change and the weather gets a little cooler. I like to have a loaf of banana bread on my counter at all times when one loaf gets eaten, I make another, then another, and so on. A slice of banana bread is the perfect on-the-go breakfast, and incredibly satisfying on those happy mornings when I wake up extra early to hit the gym before work.

I first started out with a classic recipe from the Joy of Cooking, but over the years Ive modified it to my own personal tastes. Ive tried additions of pecans, raisins, zucchini and even coconut, but this combination of walnuts and chocolate chips is my absolute favourite.

  • Mash Bananas: mash the bananas on a separate plate, bananas should be a nice smooth creamy Using a fork to mash the bananas gives more texture to our bread, dont use a mixer for this step.
  • Add Dry Ingredients: in the same bowl add in the dry ingredients and mix until just combined.
  • Fold in Chocolate & Walnuts: gently fold the chocolate chips and chopped walnuts into the batter being sure not to over-mix. After the batter has been poured into the loaf pan, sprinkle extra chocolate chips on top.
  • Bake: loosely cover the banana bread with foil for the first 30 minutes of baking, this helps prevent too much browning. Uncover for the remaining baking time.

    On its own, this banana bread with white chocolate chips and walnuts is a total winner. This time, Im sharing its recipe but Ive raised the bet. Thanks to the chocolate and the nuts, youll get a sweet, spongy and filling banana bread that goes a long way. Besides, there is no comparison to the one you could get at Starbucks.

    Unlike many of my recipes, I adopted this one just some years ago. Growing up in Argentina, I had never tried this delight. We had the pleasure to meet on my first trip to the United States when I was around 16 years old. Needless to say, we never broke apart from that day. Now, I have to make up for lost time, so its one of my go-to recipes for any weekend or to share at the office. My colleagues are a bit euphoric about it. If you want to make a good impression, I recommend this 100%.

    The base recipe is inspired by Laura Vitales, just like my Blueberry Muffins. However, Ive modified it with the passing of time and tried combining different ingredients. Until I opted for this one, the QUEEN of them all, the one youll love and never let go.
