How To Store Leftover Moist Cranberry Orange Bread

Cranberry Bread Recipe Demonstration – Joyofbaking.com

Without question, if you make this recipe during the holidays, there will hardly be leftovers. However, cranberry loaf leftovers keep well in the fridge for a couple of days. First, allow the slices to cool completely, place in a dry container, and store in the refrigerator for 3 4 days.

On the other hand, you can keep it in the freezer for three months. I recommend not pilling them together if you desire to freeze them. Instead, store them individually, preferably in a Ziplock bag ! Finally, double this cranberry orange bread recipe, so you have some leftovers.

Ingredients To Make Healthy Cranberry Bread

Lets talk about the ingredients youll need to make this healthy cranberry bread! Im assuming you already have the staples in your fridge and pantry , so well just touch upon the more interesting and important ingredients.

White whole wheat flour. Yes, this actually exists and its not just a blend of whole wheat flour and white flour! Here in the US, the majority of wheat grown is hard red wheat, and thats what is used to make regular whole wheat flour. However, theres another variety of wheat thats also grown, called soft white wheat, and thats what is used to make white whole wheat flour. It has the same health benefits as regular whole wheat flour , but it has a much lighter taste and texture. That lets the moist and tender texture of your healthy cranberry bread really shine!

Tip: Its kind of like the difference between red and green grapes. Same health benefits just a slightly different taste!

Egg whites. These add lots of protein, which helps create and maintain the structure of your quick bread as it rises in the oven, and that protein also helps prevent your loaf from collapsing while cooling. Use all of the egg whites called for to achieve the best texture!

Greek yogurt. One of my favorite ingredients in healthier baking! Here, it adds the same moisture to the batter as extra butter or oil but for a fraction of the calories.

But I promise the improved flavor will be worth the wait!

Ingredients For Cranberry Orange Bread Recipe:

The main ingredients for making this cranberry orange loaf are obviously fresh cranberries and fresh oranges. Personally, I feel that using fresh ingredients instantly elevates this recipe. On the other hand, you can use dry cranberries if thats what you have. Unfortunately, nothing beats the juiciness of fresh cranberries in this bread recipe. The bottom line is that if you want moist cranberry orange bread, then use fresh cranberries.

Ok,I heard you could buy already zested orange zest from the grocery store. Not sure if this is true however, dont do it! I recommend zesting the orange yourself to get the freshest zest flavors. An old lady once told me that if you need an orange flavor, use the orange zest. This saying is true, especially in this cranberry orange bread! Also, you will need both orange zest and orange juice. However, the zest is more important !

Popular Substitutions & Additions

If you want to make this cranberry bread a little healthier, you can substitute plain Greek yogurt for the sour cream. The measurements will stay the same.

If you like the combination of orange and cranberry, add a little orange zest into the mixture. You can even top or garnish with a few orange slices.

The Best Glaze For Cranberry Bread

Orange and cranberry are complimentarily flavored just like peanut butter and jelly. Topping the cranberry bread with orange juice and the orange zest-infused glaze makes this bread irresistible. Im not sure if its breakfast or dessert but Ive served it both ways. All you need for this easy 3-ingredient glaze is:

  • Powdered sugar I spoon it into the cup and level the top for a consistent measure.
  • Orange juice Freshly squeezed is best and dont worry about straining. A little pulp wont hurt the bread.
  • Orange zest do not skip the zest. It adds deep orange floral notes to the glaze.

Cranberry Bread With Glaze Faqs

Can I leave off the glaze?

Sure. If you dont want your cranberry bread to be extra sweet, you can leave off the glaze. Keep in mind, if youre going to eat your bread leftover, the glaze really soaks into it over time and makes it extra yummy. If you really just dont want it on top, you can even leave it on the side in case anyone wants to dip their bread into it.

Can I use fresh cranberries?

Sure. I think that canned cranberries are easier to use when youre baking, but you can also use fresh ones.

Where do I find almond extract?

You can find this at most grocery stores. Its usually near the baking and spices. Youll probably find it wherever you find a vanilla extract.

How do I know when my cranberry bread is done?

Youll know that your bread is done when you stick a toothpick in it and the toothpick comes out clean. Your bread should feel pretty firm on the top, but shouldnt be too brown.

Why am I adding sour cream to this cranberry bread?

This ingredient is actually one of my favorite parts of this recipe! It adds a little bit of flavor, but it mainly keeps your bread from being too dry.

All you need on your Thanksgiving and Christmas table is this divine, fluffy homemade sweet bread loaded with tangy cranberries. I dont think it lasts for more than 20 minutes after it comes out of the oven, so plan accordingly.

Super easy to make, all you need are: two bowls, a whisk and a spatula to fold everything together. Bake for 1 hour and voila: the perfect holiday cranberry loaf!

Tools Used To Make This Cranberry Orange Bread

You will need a 9×5-inch loaf pan for this recipe. Lining the pan with parchment paper helps a lot to be able to get the bread out of the pan easily. I use a fine mesh strainer for sifting the dry ingredients. You can also use a sifter, or if you dont have either of these, you can whisk the dry ingredients with a wire whisk.

I always look forward to the arrival of fresh cranberries in my grocery store. The small red orbs signal the start of the holiday season and I cant help but grab a bag or two to make a few recipes and add to our holiday decor.

My Instant Pot cranberry sauce has been a staple in our home during the holidays for years. I serve it with turkey and ham, of course, but youll also find me swirling it into oatmeal or spreading it on toast.

Beyond cranberry sauce, I adore using cranberries in baked goods. Nantucket cranberry pie is one of my favorites, and this cream cheese cranberry bread really knocks it out of the park!

Its like cream cheese pound cake dotted with fresh cranberries. Its moist and tender, sweet and studded with the slightly tart addition of cranberries.

Cream cheese helps provide a moist and tender texture in this bread, just like in my cream cheese cookies and chocolate cream cheese pound cake.

This bread is perfect for breakfast but could also be served for dessert. And when you are looking for something more than cookies, make a few loaves and wrap them up as gifts.

Whats the best way to store a quick bread like cranberry bread? Here are a few different ways:

  • Room temperature : If you think youll eat the bread quickly, store it at room temperature and cover it with aluminum foil. The benefit of this method is that it keeps the crunchy texture on top and is easy to eat.
  • Frozen : To extend the life further, pop your sliced bread into the freezer wrapped in foil and in a sealed container or plastic bag. It can last at least 3 months, or maybe more. Consider doing this with half of the loaf, and keeping the other half out at room temperature.

Cranberry Bread- Sweet Talk with Lindsay Strand

My first preference is using fresh oranges and cranberries for this recipe, however it is still tasty if you dont have fresh available. Heres how to adjust the recipe to use orange juice and frozen or dried cranberries:

    • To substitute orange juice, simply use the same amount as you would for fresh squeezed in the recipe and omit the orange zest.
    • To substitute frozen cranberries, do not thaw before adding them to the batter. Toss them with a tablespoon of flour first just like you would with the fresh cranberries.
    • To substitute dried cranberries, reduce the amount to just 1 cup, but still toss them with a little flour before folding into the batter.

    Ingredients For A Moist Texture

The proper flour, sweetener, and fat ratio are critical to making a tender and moist cranberry orange bread. All-purpose flour is moderate in protein level so that its soft but sliceable. If you want a healthier option, you could use white whole wheat flour like these cranberry muffins.

I use a combination of granulated sugar and light brown sugar for a hint of molasses. This mix helps to balance the tartness of the berries. The sweetener absorbs some moisture from the ingredients, helping to reduce the amount of gluten-formation, making the bread texture tough. Vegetable oil is neutral in flavor and helps to coat the proteins in the flour for tender bites. Sour cream adds additional fat to the batter and acidity to react with the baking soda to leaven the batter.

How To Tell When The Bread Is Ready

There are two ways to check the loaf for doneness. The first is when a toothpick inserted in the center comes out clean. Its ready. I also like to use an instant-read thermometer. It should read between 195 to 200ºF .

Let the bread cool slightly in the pan for 10 minutes so that its easier and safer to remove. Then place it on a wire rack to allow the steam to release and the air to circulate without causing the bread to get soggy on the bottom.

    Whisk well.

Add the wet ingredients to the dry.

Stir gently with a rubber spatula until just combined.

Add the halved cranberries and nuts.

    Mix again to incorporate.

Scrape the batter into a greased loaf pan.
