Lets talk about the ingredients youll need to make this healthy cranberry bread! Im assuming you already have the staples in your fridge and pantry , so well just touch upon the more interesting and important ingredients.
White whole wheat flour. Yes, this actually exists and its not just a blend of whole wheat flour and white flour! Here in the US, the majority of wheat grown is hard red wheat, and thats what is used to make regular whole wheat flour. However, theres another variety of wheat thats also grown, called soft white wheat, and thats what is used to make white whole wheat flour. It has the same health benefits as regular whole wheat flour , but it has a much lighter taste and texture. That lets the moist and tender texture of your healthy cranberry bread really shine!
Tip: Its kind of like the difference between red and green grapes. Same health benefits just a slightly different taste!

The bottom line is that if you want moist cranberry orange bread, then use fresh cranberries.
Ok,I heard you could buy already zested orange zest from the grocery store. Not sure if this is true however, dont do it! I recommend zesting the orange yourself to get the freshest zest flavors. An old lady once told me that if you need an orange flavor, use the orange zest. This saying is true, especially in this cranberry orange bread! Also, you will need both orange zest and orange juice. However, the zest is more important !

There are two ways to check the loaf for doneness. The first is when a toothpick inserted in the center comes out clean. Its ready. I also like to use an instant-read thermometer. It should read between 195 to 200ºF .
Let the bread cool slightly in the pan for 10 minutes so that its easier and safer to remove. Then place it on a wire rack to allow the steam to release and the air to circulate without causing the bread to get soggy on the bottom.
How To Make Cranberry Nut Bread
Begin by combining the buttermilk, orange zest, orange juice, melted butter and egg in a small bowl.
Since the recipe calls for only 2/3 cup of buttermilk, you might not want to buy a whole carton. Its easy to make your own by combining regular milk with a bit of lemon juice or vinegar . Whisk well to combine and set aside.
Next, combine the dry ingredients together in a large bowl.
Add the wet ingredients to the dry.
Stir gently with a rubber spatula until just combined.
Add the halved cranberries and nuts.
Mix again to incorporate.
Scrape the batter into a greased loaf pan.
