Rainbow Swiss Chard Gnudi With Lemon And Fresh Thyme
1 pound of Ricotta Cheese
1 bunch of Rainbow Chard
1-2 sprigs of Spring onions, chopped
1 egg
¼ cup grated pecorino romano cheese

- Ripe Bananas: Youll need about 3 or 4 which will yield about a cup and a half of mashed banana.
- Melted Butter or Ghee: This wet ingredient will make the bread moist and buttery. You can use coconut oil, but it will give the banana bread a subtle coconut flavor.
- Zucchini: One large zucchini will make about 1 cup of shreds. Adding zucchini shreds keeps the bread moist and adds some vitamins and minerals.
- Vanilla Extract: adds that hint of flavor to the bread and compliments all the flavors.
- Light Brown Sugar: sweetens the bread along with the bananas. For refined sugar-free banana bread, use coconut sugar.
- Eggs: will help bind everything together and give it nice brown top.
- Gluten Free Flour Blend: I love using King Arthur Gluten Free Flour Blend because all of my gluten-free baked goods come out perfect. If gluten is of no concern, you can use all purpose flour.
- Warming Spices/ Ground Cinnamon & Nutmeg: give this zucchini banana bread warm and cozy flavor.

Almond Flour Bread Versus Bread With All
There are some great all-purpose gluten-free flours on the market now, such as Thomas Kellers Cup4Cup, so if you are looking for a regular white loaf, you can use an alternative white gluten-free flour like that in a traditional recipe for white bread. However, almond flour is naturally low-carb and yields a moist loaf, which brings a different texture entirely to regular all-purpose flour.
Preheat Oven And Dutch Oven
Once the dough has poofed up and nearly doubled in size, youre ready to bake that beautiful gluten-free artisan bread.
Add your Dutch oven to your oven and set the oven temperature to 425º F. Allow the Dutch oven to warm up along with the oven. Do NOT add an empty Dutch oven to a hot oven. Allow the Dutch oven to come to temperature slowly with the oven as it preheats.
Please note that many Dutch oven manufacturers advise against heating an empty Dutch oven as it may crack. This is especially true of enameled Dutch ovens, which are at higher risk of cracking. I recognize the risk, and my Dutch oven hasnt cracked when I preheat it slowly with my oven.

My favorite is Bob Reds Mill because its a 1-to-1 blend that makes baking gluten free so easy. Another option you could try is this Kings Arthur Gluten-Free Measure for Measure Flour or this Cup4Cup Gluten Free Flour blend! As with anything though, try it for yourself and see what works best.
The reason that gluten free flour mixes work so well is because theyre specifically formulated for baking. For instance, the Bobs Red Mill gluten free blend includes various flours, starch, and gums that bind and bake like a normal glutenous flour would. Thats why I dont recommend just subbing a gluten free flour blend with something like almond or oat flour because it will effect the final product!

1Shred zucchini:Using a box grater, carefully shred all of the zucchini. You do not need to peel it beforehand . Using a nut milk bag, cheese cloth or paper towels, wring out any excess moisture from the zucchini shreds. Set aside.
2 Preheat oven and prep loaf pan:Preheat your oven to 350 degrees F. Grease a 9 x 5 loaf pan with butter, avocado oil or coconut oil. You could also line it with parchment paper. Once cooled, the loaf of bread will pop right out.
3 Mix wet ingredients together: In a large bowl, whisk together melted butter and sugar until fully combined. Then, add the ripe bananas and mash them in until they are no longer chunky . Next, whisk in the eggs, vanilla extract and shredded zucchini until a smooth, loose batter forms.
4 Mix in dry ingredients:To the batter, add flour, salt, baking soda, cinnamon and nutmeg. Mix to combine.
5 Fold in mix-ins :If you are adding chocolate chips, nuts, dried fruit, etc., gently fold them in now. Save some to sprinkle on the top of the bread before baking.
6 Bake, cool, slice and serve:Pour batter into greased loaf pan and bake for 1 hour or until a toothpick inserted in the middle comes out clean. You may need to bake your bread 5 to 10 minutes longer depending on your oven. Let cool COMPLETELY before removing from the loaf pan, slicing and serving.

After 3 hours, the dough should be well-risen in the bulk fermentation container and be puffy to the touch. This is a relatively strong dough at this point in the process, so it doesnt need a heavy hand when preshaping.
Fill a small bowl with water and place it next to your work surface. Scrape the dough onto a clean counter. Divide the dough into 2 equal pieces. Then, preshape each piece into a round.
