How To Freeze Bread:
- Let bread cool completely at room temperature.
- Arrange cooled slices in a single layer on a baking sheet or dish. Place sheet in the freezer for about 30 minutes until the slices are solid .
- Then, place frozen slices of bread in airtight freezer bags or an airtight container and transfer them to the freezer.
- Store in a freezer for up to 3 months. When ready to enjoy, let thaw on the counter or pop in the microwave for a minute or two until warm.

No matter what the season, you cant go wrong with a classic banana bread!
Besides at the end of the week, we always seem to have some ripe bananas in the house so freshly baked bread is the perfect use for them.
This recipe is from my mom and it is one of those super simple recipes that adapts so well to dietary needs and preferences.
The original recipe was obviously not gluten-free, so with this gluten-free version we used GF Jules All-Purpose Gluten Free Flour. , which has been our go to gluten-free flour for years as it is easy to substitute 1 for 1 in non-gf recipes. And we added some baking powder and reduced the baking soda so that the loaf was still light and fluffy.

Gluten Free Banana Bread
Gluten free banana bread is a go-to classic recipe in our house that we always have on hand.
I discovered early on when we started living gluten free that it was consistently my daughters #1 choice at gluten free bakeries.
So, naturally I became determined to develop a recipe we could make at home and its become a family favorite!
I love how comforting the flavors are and how simple it is to make.
Plus, it freezes really well so I try to make it in large batches whenever I can.
That way, we have some hot out of the oven and can save the rest for future busy mornings and lunch box treats.
Our gluten free banana bread recipe contains only 6 ingredients, and has half of the sugar of many banana bread recipes but is totally sweet.
When we make it we use bananas that are so ripe they at least have a lot of brown dots all over them.
Its also perfectly fine if theyre totally brown on the outside.
For vegan butter, I like using Earth Balance olive oil as I find that unlike many other vegan butters it doesnt have an after taste or change the flavor of baked goods.
You can also substitute coconut oil, but that will make it slightly sweeter and a bit more dense.

There is a very fine line between delicious moist gluten free banana bread, and soggy gluey gluten free banana bread. Thats why I used two of my favorite gluten free baking ingredients to ensure this banana bread turned out PERFECT.
First, I started with my tried and true Bobs Red Mill 1-to-1 Gluten Free Baking Flour. I use this in almost ALL of my gluten free recipes because it just never fails. Its the perfect blend of rice flour, healthy starches, and xanthan gum that just takes the guess work out of gluten free baking.
To add a bit of texture into this smooth batter, I included another gluten free baking favorite. Bobs Red Mill Organic Gluten Free Old Fashioned Oats are, like they say, completely gluten free. You have to be careful with oats, because most brands mill their oats in the same factory as wheat ingredients.
But, whenever I bake with old fashioned oats, I always like to give them a quick pulse in a food processor. I love the texture from old fashioned oats, but sometimes its a bit too chunky for what Im looking for. Ground old fashioned oats gives that extra bit of texture without any chewiness.

Xanthan Gum And Raising Agents
The xanthan gum is a necessary binder to the bake. Even with the ground almonds and carefully structured flour blend, it honestly makes a difference. If you are unable to tolerate xanthan gum, substitute with 2 teaspoons of psyllium husk or use an alternative binder of choice.
Gluten Free Banana Bread uses a combination of both baking powder and bicarbonate of soda for best raising. However, if you prefer not to use bicarb, sub with baking powder at twice the quantity of the bicarb.

Youll need three medium bananas for this bread. Thats about one cup of mashed bananas or 12 ounces of peeled bananas.
Want to use less sugar? This bread can handle it. Reduce the sugar from 3/4 cup to 1/2 cup. You can go as low as 1/3 cup.
For an intense banana flavor: use deep brown, almost black bananas.
Ingredients In Gluten Free Banana Bread
Bananas– For this recipe you need 3 large bananas that are overripe. For the best banana bread, I like to use bananas that are at least halfway brown on the outside.
Oil – For moisture, you can use either melted butter or an oil of your choosing. Vegetable, canola, avocado, and coconut oil all work well.
Yogurt – For additional moisture without added fat, plain yogurt is added. You have options with this ingredient too. Use regular or dairy free yogurt, Greek or not. You can also use applesauce, another fruit puree, or more oil.
Sugar – regular granulated sugar gives the best texture and the perfect amount of sweetness .
Eggs – Eggs hold everything together and aid in helping this quick bread rise and brown up nicely.
Vanilla Extract – a good quality, gluten-free vanilla extract adds a deep, warm flavor to banana bread.
Gluten Free All-Purpose Flour – You can use your favorite blend. I used Bob’s Red Mill 1-to-1 baking blend.
Baking Powder and Baking Soda – these are the workhorses of most quick breads. They replace yeast as a leavener, and help the bread to rise in the oven.
Salt – a pinch of salt in baked goods enhances the sweetness.

Can I Bake Your Gluten Free Banana Bread With Less/no Sugar
I can definitely understand the need to reduce sugar in our foods, but I wouldnt advise it with this recipe.
Of course, the sugar isnt just for sweetness its an integral part of the structure of the cake.
Yes, theres lots of natural sugar in banana, but the extra brown sugar helps to cake to develop a nice, even crust instead of coming out like pudding.
Can I Make This Recipe Vegan

Yep! If you follow the instructions above to make this cake dairy free, then all youve got left to contend with is the eggs.
Heres a few ideas you can use as egg replacements, so each of these = 1 egg.
- 3 tablespoons of aquafaba water from a can of chickpeas. Keep the chickpeas for a future dinner!
- Egg replacement powder Id recommend using Orgran as its gluten free.
- 1 tablespoon of chia/flax seeds mixed with 2 tablespoons of water and left for 10 minutes in the fridge.
- 3 tablespoons of applesauce.
So use one of those egg replacement options and youve got gluten free AND vegan cake! I havent tried all of these egg-replacement options with this cake, but if you do, please comment below with how it goes.

DAIRY FREE GLUTEN FREE BANANA BREAD
If you need a dairy-free option for this banana bread you can either replace the yogurt with dairy-free yogurt or you can use applesauce.
GF BANANA BREAD WITH MIX INS
There are several ingredients you can add to your gluten-free banana bread recipe to add more texture or flavor. The following are a list of my favorite add-ins.
½ cup chopped nuts – A lot of bakers love to add some chopped nuts into their banana bread. Some favorites include walnuts and pecans. Macadamia nuts are also a great option, and have a wonderful crunch to them. Make sure the nuts are fresh, and not rancid, before you add them. To add nuts to your gluten free banana bread, stir them in with a spoon, or fold them in, not to mix the batter too much.
½ cup shredded coconut – Similar to nuts, coconut adds a nice flavor and texture to banana bread. You can use unsweetened coconut, sweetened coconut, or toasted coconut in banana bread. Make sure to fold the coconut into the banana bread batter, not to mix it too much. If you like coconut, you’re going to love this coconut pecan banana bread.

Slightly Decreased The Oil
Almonds, like all nuts, naturally contain some oil. They contain more oil than the very small amount youll find in whole wheat flour. Fun fact: all-purpose flour has been stripped of all oils, which is why it keeps longer.
I was able to reduce the amount of oil in this recipe slightly, by dropping the oil from 1/3 cup to 1/4 cup. In fact, I was able to get by with as little as 2 tablespoons oil in this recipe, but I love the rich texture produced by 1/4 cup.
Why Does Gluten Free Banana Bread Take So Long To Cook
Banana bread is very tender, and doesnt crisp on the outside even when its fully cooked. Its moist and tender all the way through because it has a lot of trapped moisture in the mashed bananas and the sour cream.
If you place sliced bananas on top of the raw batter in the loaf pan, be very sure you slice those bananas very, very thin. It will still take longer to cook than without the bananas on top, but the extra moisture wont make your bread collapse.

How Do You Make Gf Banana Bread Moist
Adding the correct amount of moist ingredients, like ripe bananas, butter, and sour cream, will result in a beautifully soft, moist bread.
But its also important that you use the right amount of dry ingredients, like baking soda and baking powder, but especially gluten free flour. Too much flour will soak up your wet ingredients, resulting in a dry, crumbly bread.
The best way to measure out ingredients is by weight. When you scoop flour directly, you may compress it in the cup, accidentally adding more than necessary. Instead, place your bowl on a digital food scale and then spoon the flour into it, stopping when you reach the right weight.
