Why Isnt My Gluten Free Bread Rising
Honestly, there are several reasons why you may run into this issue. First and foremost, I implore you to follow my bread recipe exactly as written to avoid this type of problem. This includes using the same ingredients, especially the flour blend.
One reason you bread may not be rising is that youre simply not allowing it enough time to proof. Ideally, itll rise in 30 to 45 minutes, but depending on local conditions, it may simply take longer.
Dont try to speed up the proofing process by sticking your dough in a hot oven thats a quick way to kill your yeast, and then your bread will never rise.
Make sure to use instant yeast. If you only have active dry yeast on hand, follow my instructions above to make the substitution.

Can I Make This Gluten Free Wholemeal Bread Dairy Free And Vegan
It is easy to make this gluten free bread maker recipe dairy free with a simple sub of dairy free milk or milk powder. I have tried making it with both coconut milk powder and also KoKo Unsweetened Coconut Milk with perfect results. I would try and avoid sweetened milk products.

Tips For Making Gluten
Here are my tips that work with this gluten-free bread recipe. See below for my gluten free bread machine recipe.
Don’t substitute anything in this gluten free bread recipe unless I specified above that I’ve tested it. This is important. If you substitute something I can’t guarantee anything and I can’t help you troubleshoot if something doesn’t work in your gluten-free bread.
Ingredients at room temperature work best. You can always run your eggs under warm water for a couple of minutes to bring the temperature up.
Read the recipe instruction and get all ingredients out before you start.
Use dry active yeast or quick yeast. I use Fleischmann’s yeast: it’s labeled gluten-free. I’ve also used Red Star yeast.
If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want to put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.
Make sure your water is between 95-110 degrees before adding the yeast. If you don’t have a thermometer I suggest you get one.
Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.
Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.

Why Was My Gluten
For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.
If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two, when making gluten free bread. Mixing it twice will always cause the bread to be denser.
Are you scooping your measuring cup into the flour? Or spooning the flours into the cups and then leveling? You should always spoon then level.
Otherwise, you’ll end up with more flour than you want which causes the bread to be dense.
Are you storing your flours in the freezer or refrigerator? If flours are stored that way they lose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

What Size Of A Pan Do I Use To Make Gluten Free Bread
This gluten free bread recipe was developed using a 9 x 4 inch metal loaf pan. You can use a different size loaf pan but you’ll want to watch the cook time. Also, it won’t have the same rise, depending on the size.
You can also make this bread recipe in a glass loaf pan lined with parchment paper. Metal and glass pans transfer heat differently and gluten free bread loaves typically have a thicker crust when baked in a glass pan.
Tips For Making Gluten Free Bread In A Bread Maker:
1- You dont have to have the most expensive breadmachine to have the best bread. I travel with my bread makers for many cooking classes, and I wont risk a big investment being in the hands of the TSA. So I tend to prefer mid-range bread makers for travel: Oster®, BreadMan® or Cuisinart® and Hamilton Beach®. These are all typically in the $85-$150 range.

The process of baking gluten free bread in a bread machine is the same, no matter which model you use: liquids first, then dry ingredients, then yeast. Heres a quick video showing you how:
2- You dont have to have a bread maker with a gluten free setting to bake gluten free bread. But it helps. If you have an older bread machine without a gluten free setting, make sure its totally clean from any gluten residue. If there are scratches on the pan or the paddle, buy new ones because they could house gluten left behind from the last loaf.
If you are in the market for a new bread maker, buy one with a gluten free setting. Check my review of gluten free bread machines though, as they are not all created equally just because a machine has a gluten free setting, does not mean it will produce a good loaf.

What Bread Machines Are Best For Gluten Free Bread
There are several great brands of gluten free bread machines that have a gluten free setting. My friend, Jane, who wrote The Gluten Free Bread Machine Cookbook, likes to recommend the Cuisinart CBK-200 machine. I have an old Breadman Pro, but I do not think they even make it any longer. Many in my gluten free FB group like this Hamilton Beach model.
Two Things You Must Buy To Make This Bread:
1) A Bread Machine with a gluten-free setting and that bakes up to 2lb loaves.
Gluten-free yeast breads do not handle two rises well at all. They need extra mixing time, and only one rise cycle. You need to make sure to get a bread machine with a gluten-free setting as it is programmed for this method. I know of three bread machines brands that have models with a gluten-free setting.
Some have commented that this bread overflowed in their bread machine. This recipe is scaled for a bread machine that accomodates 2 lb. loaves. If youre is smaller, with room for 1 lb. loaves only, then this will overflow.
The older bread machine that I have and have used for years in making this bread is . I have had mine for many years now, and for over a year I used it weekly. It has worked perfectly for me. Another, very similar model is available with free shipping with Amazon Prime, Cuisinart CBK-100 2-Pound Programmable Breadmaker.
There are, Im sure, other models available, but hopefully this gives you a starting place. Just remember to make sure to get one that says it does 2 lb. loaves and has good reviews in regards to mixing well and not burning.
2) Maninis brand Gluten-free Multi-Purpose Flour

How To Make Into Gluten Free Breadcrumbs
Since this bread does dry out so fast, it makes great gluten free bread crumbs. If you wont eat the entire loaf in 2 days, you can slice up the rest and bake it on your ovens lowest setting until its completely dried out.
Once cool, crush into bread crumbs and store in an airtight container in the fridge. Since there are no preservatives in these bread crumbs, use them up quick!

Freezing Gluten Free Sandwich Bread
Another wonderful thing about this gluten free sandwich bread recipe is that it also freezes fabulously! This means you can enjoy a yummy gf sandwich at a moments notice.
For freezing, you will want to slice the gluten free bread into individual portions. Make sure each slice has cooled completely, and then wrap tightly and freeze.
When youre ready for a sandwich, remove as many slices as you need and refresh them by popping them right in the toaster .

What Is The Texture Like
You may be wondering about the texture, since many gluten-free breads aren’t great on this feature. As you can see from my photos, this recipe produces a wonderful texture that is similar to traditional white or whole wheat bread. Its not dry and crumbly, nor is it moist to the point where it falls apart in your hand after you attempt to cut it.

What Temperature Is Best For Proofing Yeast
You dont have to proof yeast when you use a breadmaker, which is one of the reasons I love this method. However, proofing your yeast is critical when baking bread in the oven.
You want to warm the temperature to about 100° F. Too cool and the yeast wont activate. Too warm, and youll kill the yeast. Use a thermometer for best results.

Best Gluten Free Flour For The Bread Machine
There are so many good gluten free flour blends and I have tried a few when I was developing my recipe. Most didn’t perform the way I wanted to I decided to create my own blend. I chose sorghum flour, brown rice flour, tapioca starch, potato starch, and ground flaxseed meal.
This combination of gluten free flours yielded the best results by far. This bread is a good gluten free sandwich bread. It holds up to peanut butter and jelly and a full lunchbox without breaking! The flavor and mouthfeel of the bread are light and fluffy.
NOTE: After two people reached out, I want to re-emphasize this recipe works with my custom flour blend or Cup4Cup, with a few modifications. See the FAQ for the modifications. Bob’s 1 to 1 and King Arthur Measure for Measure are not as good for yeast recipes.
Step 3: Open your bread machine and make sure the paddle is on the spinner. Pour in your mixed wet ingredients.
Step 4: Pour the whisked dry ingredients on top of the wet ingredients.
Step 5: Dump the yeast on top of the dry ingredients. Close the cover and press the button. My bread machine has a gluten free setting. If your bread machine has this setting, use it. After 5 minutes, take a soft rubber spatula and press the flour down from the sides. This tip will help prevent unmixed flour pockets on the side of your bread.
At this point, when the mixing has stopped, you can try to remove the paddle with the long tongs I linked below, or you can remove it when the bread is baked.
