Which Bread Maker Is Good For Making Gluten Free Bread
Not everyone has a bread maker. And buying one is not a cheap investment for sure. We first got ours after Coeliac diagnosis, thinking we could make better bread than we were buying. We could. But is still wasnt good enough and it wasnt that long before the bread machine got relegated to the cupboard and hand-baked loaves became the norm.
With the learning from my hand-baked Wholemeal Breadhowever and a number of requests from readers for a gluten free bread maker recipe, the time seemed right to work harder!
But which bread maker is best for gluten free bread?
Ill be honest, I only have experience of one. The Panasonic SD-2501. It is quite old now, but it has a specific gluten free setting. The current equivalent model is thePanasonic SD2511KXC. But bread machines have come a long way and there is now an all-singing all-dancing Panasonic SD-ZX2522 with a whole range of gluten free programmes, including for pasta and cake. Id love one, but to be honest it is a little above my price range.
There are of course a number of appliance companies that now make bread machines with a gluten free setting option. Just bear in mind that all bread makers are different. So whatever machine you own or buy, get to know it to understand how best to use it. If making gluten free bread, always use a gluten free setting if possible. And if you already own a bread maker which hasnt got one, use a quick/basic/rapid programme setting that only kneads once.
What Bread Machines Are Best For Gluten Free Bread
There are several great brands of gluten free bread machines that have a gluten free setting. My friend, Jane, who wrote The Gluten Free Bread Machine Cookbook, likes to recommend the Cuisinart CBK-200 machine. I have an old Breadman Pro, but I do not think they even make it any longer. Many in my gluten free FB group like this Hamilton Beach model.

Instant Yeast Vs Active Dry Yeast
Two of the most common products youll find on the shelf are instant yeast and active dry yeast.
My homemade gluten free sandwich bread recipe calls for instant yeast, which may also be labeled as quick rise.
If youd like to substitute active dry yeast instead, you can, but youll need to take a few extra steps. First, multiply the weight of instant yeast by 1.25 for the right ratio.
Because active dry yeast has a thicker coating around the yeast, youll need to help break it down. You can do this by soaking it in some of the milk for this recipe until it foams.
Once foamy, add it and the rest of the milk when the recipe calls for it.
Why Was My Gluten

For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.
If you dont have the gluten free setting option, use a quick program that features one mixing cycle, rather than two, when making gluten free bread. Mixing it twice will always cause the bread to be denser.
Are you scooping your measuring cup into the flour? Or spooning the flours into the cups and then leveling? You should always spoon then level.
Otherwise, youll end up with more flour than you want which causes the bread to be dense.
Are you storing your flours in the freezer or refrigerator? If flours are stored that way they lose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

What Size Of A Pan Do I Use To Make Gluten Free Bread
This gluten free bread recipe was developed using a 9 x 4 inch metal loaf pan. You can use a different size loaf pan but you’ll want to watch the cook time. Also, it won’t have the same rise, depending on the size.
You can also make this bread recipe in a glass loaf pan lined with parchment paper. Metal and glass pans transfer heat differently and gluten free bread loaves typically have a thicker crust when baked in a glass pan.
Tips For Your Gluten Free Bread Machine Recipe
- Follow the recipe and only make the substitutions noted. If you decide to try a different substitution, you may get a very different result.
- Ingredients always work better at room temperature. This allows baking to begin sooner and with consistent heat. Even eggs can be brought to room temp quickly by running warm water over them for a short period of time.
- Make sure to read all the instructions first and get the ingredients prepared. This ensures you follow the recipe in order and dont miss any steps.
- Do not use instant yeast. Dry active yeast or quick yeast work well but instant does not.
- For egg-free bread, use chia eggs. The three eggs can be replaced by a mix of 1 tablespoon of chia seeds and 7 tablespoons of water. Let this mix sit for at least 5 minutes before you add it to the recipe.
- You can use psyllium husk powder in place of xanthan gum. 3 tablespoons of psyllium will replace 1 ½ teaspoon of Xanthan.

Pro Tips For Making Gluten
- I usually store the leftover bread in an airtight container, once its completely cooled. It may be kept on the counter .
- It is also best not to slice the bread before you store it, so just store the left-over portion of the loaf.
- I like to reheat my bread the next day because the gluten-free bread is best when warm.
