1. Combine the coconut oil + sugar. Mix these two together until well incorporated.2. Eggs. Add in the eggs, one at a time until fully incorporated.3. Yogurt + Vanilla. Add in these two wet ingredients and mix well.4. Bananas. Add in mashed bananas and mix until mostly smooth – a few lumps are OK.

5. Dry Ingredients. Mix or sift together the gluten free flour, baking soda and salt6. 1-2-3 Dry Ingredients + Wet. Add the dry ingredients to the bowl of wet ingredients in three parts, mixing slowly each time.7. Chocolate time! Add in the mini chocolate chips and fold them into the batter gently.8. Time to Bake! Line a bread pan with parchment and spray it with coconut oil spray. Spoon the batter into the pan and top with additional mini chocolate chips if desired.

    When my mom, my brother, and I met up with our aunt and cousins for our Disneyland vacation this past spring, we all stayed at the same hotel, almost directly across the street from Target.     Bananas are low in fat and sodium, cholesterol free, and packed with nutrition, including fiber, potassium, folate, vitamins and antioxidants.

    However, bananas are also a high carb fruit, with over 20 grams of net carbs in one banana. This means that bananas are not keto diet friendly. So the idea of keto banana bread is an oxymoron.

    If you need a truly keto banana bread recipe, I recommend making your favorite basic regular keto bread recipe and just add banana extract for a banana flavor without as many of the carbohydrates.

    The recipe below is lower carb than traditional banana bread. This one has about half the carbs of regular banana bread and around a third of the net carbs. There are 7 grams of net carbs in this banana bread recipe.

    Make Ahead And Freezing Tips

  • If you do want to make this bread in advance, you can mix the wet mix and store it in the fridge a day ahead. The dry mix can be mixed and covered and left on the counter up to a day ahead.
  • Leftover bread can be wrapped up in plastic or foil and left on the counter for two days.
  • It can be frozen for 1 month. Wrap in two layers of foil and set in a plastic resealable freezer bag.

    This double chocolate banana bread is super simple to make, but here are some tips to make sure its perfect every time!

    • Ripe bananas. If your bananas arent quite ripe enough, you can ripen them quickly by wrapping them in foil and popping them in the oven at 350°F for 10-15 mins!
    • Mashing bananas. If you dont want to take the time to mash with a fork or potato masher, use an electric hand mixer or blender to mash them quickly.
    • Baking. After about 35 minutes of baking, if you notice the top of the bread browning too quickly, lightly cover it with foil.
    • Cool the bread. Make sure to let your banana bread cool completely before removing it from the pan and cutting it into slices. As the bread cools, it will set, so if you cut it too soon you run the risk of it falling apart.

    How To Make Vegan Banana Bread

    Start by preheating your oven to 350 degrees F.

    Grease a 9×5 inch loaf pan, and set aside. In a large mixing bowl, stir all dry ingredients very well, then stir in wet to form a batter.

    Smooth batter into the prepared loaf pan, then bake on the center oven rack for 48 minutes. In my oven, its always light, fluffy, and cooked through after this time, but if you live in a super humid climate or its a rainy day , yours might need a few more minutes of baking before a toothpick inserted into the center of the banana loaf comes out mostly clean.

    Let it cool, then go around the sides with a knife and the loaf should pop right out. If you can wait, I recommend loosely covering overnight, because some of the excess moisture will evaporate and the flavors deepen, so its sweeter and better textured the next day.

    For freshness, its best to store in the refrigerator after a day.

    Eat plain or frost with coconut butter, vanilla icing, or Vegan Cream Cheese.

    If there are any leftovers after 3-4 days, they can be sliced and frozen, with parchment paper in between each slice, in a glass Pyrex or plastic Tupperware container for a month or so. Thaw frozen slices before eating.

    • coconut sugar – coconut sugar is a delicious natural sugar used for baking. You can also use raw honey or maple syrup if you prefer banana bread with no sugar.
    • dairy free or greek yogurt – I used Forager dairy free yogurt for this recipe. If dairy is not an issue for you, I recommend using any vanilla greek yogurt.

    Oh, and I should probably mention theres NO BUTTER, OIL, OR REFINED SUGAR in this bread! Um ok what?! No butter, oil, or sugar means guilt-free snacking, my friend. It’s the best!

    Lastly, this bread is READY in one hour. Most recipes you’ll come across say you need to bake for 50-65 minutes. My Healthy Chocolate Chip Banana Bread is DONE in 60 minutes! If you move quickly, you can have the batter ready before your oven beeps at you. Pretty sweet, right? No more waiting around for your favorite snack. It’s the best!

    How To Make Healthy Chocolate Chip Banana Bread:

    To start making your healthy chocolate chip banana bread, beat ripe bananas, sweeteners of choice, eggs, milk and vanilla in a large mixing bowl. This easy banana bread can also be mixed by hand! Just use a fork to mash your ripe bananas first before adding the remaining ingredients.

    Next, stir together the dry ingredients including the flour, baking soda, cinnamon and salt. Partially fold the dry ingredients into the wet ingredients and then add the melted coconut oil and chocolate chips. Mix batter until just combined. Adding the coconut oil towards the end ensures it doesnt harden from the cold ingredients.

    Chocolate Chip Banana Bread Bar Substitutions

    If you want to make these bars but dont have the EXACT list of ingredients, here are some swaps you can make:

    Almond Butter This can be substituted with any nut or seed butter like cashew, peanut, or sunflower seed butter. Tahini could also work, but the bars wont be AS sweet. Whatever you choose to use, just make sure its natural and made without any added ingredients like sugar or oils.

    Pure Maple Syrup If you dont have this on hand, you can also swap with honey, date syrup, or even agave. I havent tested it, but coconut sugar may also be a good option.

    Oat Flour If you dont have oat FLOUR, you can just make your own by grinding whole oats in a food processor until it turns into a flour. You could also try swapping with almond flour as this is a great substitute for oat flour. But do not use anything outside of these two flours as something like coconut or cassava could completely changed the texture of these bars.

    Chocolate Chips If you dont have these, they can be left out and nothing about the recipe will change. Although they do add delicious flavor! Chopped walnuts, pecans, or peanuts are also a good option. Just make sure theyre unsalted.

    Can I Use Sweetener

    I use all-natural healthy ingredients in this recipe because it’s one I make often for the whole family. This banana and chocolate chip loaf has no sweeteners, nothing artificial, and all ingredients you can identify and expect to see in a real cake. Which is important to me when it comes to recipes the kids are going to eat.

    I also have to stop here and say, when I am going to use syns on a cake, I would much rather use a few more syns, for good natural ingredients where it tastes like real cake. I am not super keen on recipes that use half a dozen eggs and very little other ingredients, I’ve made them, eaten them, but I can honestly say it never really tastes like a real cake. There are a couple that is ok but for me, banana and chocolate chip loaf has to be the real thing or nothing at all.

    Plus the maple syrup is a wet ingredient, so if you use sweetener you won’t get the same bake or taste. For that reason, I don’t recommend using sweetener, sometimes you just have to use the real ingredients.

    If you don’t have maple syrup, then honey is a good replacement.
