When all TJs sold was their gluten free white sandwich bread, I didnt include it in this best-of gluten free bread list. All 3 of my children agreed that it just was not very good.
The loaves were so tiny that it was actually quite expensive in the end. But theyve since come out with a sliced gluten free Italian bread that is really good. So its included as a bonus entry.
I count 12 generous slices in a loaf, each of which is the size and shape of what I remember sandwich bread to be. The slices have a tender interior thats soft without being gummy at all.
It toasts well, too. And the end pieces are full-sized, which is why I counted them among the 12 slices.

Gluten In Sourdough Bread
Gluten is the name for a group of proteins found in wheat, rye, and barley. It causes damage to the intestinal lining in those with celiac disease, so its essential to avoid all sources of gluten if you have this condition (
Those with a gluten sensitivity or wheat allergy should also avoid gluten and wheat-containing foods.
The main ingredient in sourdough bread is usually wheat flour which contains gluten.
While one lab analysis of the gluten in wheat sourdough bread has shown that it has less gluten than other types of wheat bread, the amount can vary .
This means there may still be unsafe levels of gluten in regular wheat sourdough bread.
However, gluten-free sourdough varieties, which are made from gluten-free flours like rice, sorghum, or teff, are available .
The Food and Drug Administration requires all products that are labeled gluten-free to have a gluten content below 20 parts per million .
If your sourdough bread contains wheat, rye, or barley, it also contains gluten. If you have to follow a strict gluten-free diet, only purchase sourdough bread made from gluten-free grains.

I got hit with the following question yesterday:
I have been hearing a lot of buzz lately about sourdough bread being safe on a GF diet. WHAT?! Yes, Id kill for a grilled cheese on real sourdough but wondered what you know about it. Some articles say some sourdough is safe for GF but not for those with celiac. My gut tells me to not even try. What say you?
Now Ive see headlines in the past that talked about this but never gave it much thought. I mean, who would ever trust that bread made with gluten would be safe for those with celiac disease? WellI should know better than to underestimate our society and especially our media. It seems a lot more than I had assumed. Some examples:
Mind Body GreenA team of scientists in Italy in 2010 showed that gluten content was much lower in breads that were made in the traditional, old-world style. The difference was so stark that celiacs in the study were able to consume the sourdough with no ill effects.
Livestrong.comMost gluten-free breads are dense, dry and expensive. But wheat bread may be making a comeback for the gluten-intolerant thanks to new research on sourdough. It turns out this old-fashioned baking technique may help break down gluten in wheat. Gluten May Not Be The Culprit For Symptoms
Food intolerance is not yet well recognized or understood, partially because symptoms can vary greatly with the individual and their exposure to a specific food. Thats why its important to stay away from labels like gluten-intolerant and find what works for you as an individual.
In one study, 86 percent of individuals incorrectly thought they had non-celiac gluten sensitivity. Similarly, naturopathic doctors who see patients claiming to have gluten sensitivities have found that sometimes it is not gluten, but fructans, oligosaccharides, or other compounds in foods that are causing symptoms. If someone is getting only partial benefit from a gluten-free diet, it might be a good time to consult with a naturopathic doctor. There may need to eliminate different foods or work on other areas of their gastro-intestinal health.

Step : Proof Overnight
Next, were going to transfer the dough into the proofing basket, aka banneton. Proofing is essentially the final rise. After much experimentation, we have found the best results with our gluten-free sourdough bread when the room-temperature bulk fermentation phase is followed by a long cold proof in the refrigerator. This is almost exactly how we bake our wheat-based sourdough bread, with one exception: time. Wheat is more forgiving and can sit for up over 24 hours in cold proof. On the other hand, gluten-free sourdough peaks and falls faster, so I suggest a 7-12 hour cold proof instead.
By putting the dough into a banneton, it helps it form and hold the perfect loaf shape. A banneton proofing basket is made from woven material, which allows extra air into the loaf adding to the rise. Last but not least, using a banneton for proofing makes the transfer into the hot baking pan a bit easier. If you do not have a bannteon, simply transfer the dough into a smaller bowl (a loaf-size bowl that will easily fit in the fridge.

How Many Ppm Of Gluten Is In Sourdough Bread
There has been some research into the differences between traditional yeasted bread and sourdough yeasted bread when it comes to gluten levels. The fact is that wheat-based sourdough bread has much less gluten in it than regular bread. This is because the dough goes through a process of fermentation where the bacteria in the starter actually start to break down the gluten in the flour.
Instead of the 80,000ppm of gluten that is in typical bread, sourdough bread has about 2,000ppm.
For this reason, there are some non-celiac, gluten-intolerant folks who can actually eat sourdough without negative reactions.
That said, I don’t recommend that you risk it. Make this recipe instead, so you can be sure that there is NO gluten in your sourdough at all.

Gluten-free sourdough starters can take time to cultivate and require more maintenance than glutenous starters. But the resulting sourdough is totally worth it!

The Texture And Flavor Of Gluten
If you think that gluten-free sourdough bread is dense, gummy, and tastes terrible, you are wrong. Sure, gluten-free sourdough bread might not get pretty as tall and lofty as wheat loves.

How To Make Sure Your Sourdough Is Lower In Gluten
While sourdough is naturally lower in gluten, there are a few steps you can take to make sure your baked loaf contains less gluten than regular yeasted bread:
- Using less sourdough starter will mean you need a longer bulk fermentation.
- Longer cold fermentation will give the bacteria more time to break down the gluten. Ideally, keep your sourdough in the cold fermentation process for at least 24 hours.
- Substituting some whole wheat or rye flour for some of the bread flour in your sourdough will give your loaf an overall lower gluten levels.

To get started, youll need to spend a few minutes a day for seven days. Then youll be able to maintain it by feeding it more flour and water as necessary.

How Long Will This Gluten Free Sourdough Bread Take To Rise
This rise takes quite a bit of time. In all of my recipe testing, Im yet to see a rise that took less than 3 hours.
But this bread dough is much less likely to overproof and take on that pock-marked appearance than bread made with conventional yeast. If youre unsure about whether or not the bread has proofed enough, allow it to keep rising.
Ive even allowed the dough to rise for 8 hours. It still hadnt overproofed. Overproofed dough like this tends to have little dimples on the surface. That takes a lot longer to happen here.
That means that you can feed your active starter tonight, and leave it out on the counter, loosely covered. Then, when you wake up tomorrow morning, make the bread dough and set it to rise during the day. When youre about an hour away from dinnertime, bake the loaf and enjoy.
Picking Your Flour Blend
These are the flours I use most for my gluten-free sourdough bread! I switch these up often, and I recommend you experiment with them as well, taking notes to see which combinations you prefer. Ill go into a bit more detail about this in the recipe itself.
You can also use other flours, like buckwheat flour, teff flour, oat flour, and Im sure others I havent mentioned! Ive yet to experiment adequately with these to be able to speak to them, but I will update this post as I know more about those flours and how they perform within this recipe.

Step 6 Bake The Bread
Transfer your dough onto a sheet of baking paper, dust off the excess flour to avoid burning, and score your bread as you like. Then transfer the dough with the baking paper into the hot dutch oven. Be careful not to touch it with bare hands!
Place your bread into the oven, lower the temperature to 450F/230C and let it bake for 40 minutes. After that take off the lid, lower the temperature to 425F/215C and bake for additional 40 minutes.
Let the bread cool completely before cutting into it! Waiting will help you avoid gumminess and will ensure your bread doesnt dry out too soon!
Getting Your Starter Ready For Baking
Youll want your starter to be at peak activity when you mix up your preferment! You also want to make sure you have enough starter for your loaf, and to make your bread. So, before making bread, I like to do a big feeding and get to a solid doubling in size of my starter.
If your starter had been in the refrigerator, you want want to do two feedings before making bread to make sure your starter is super happy and ready to go!
