What Is The Best Type Of Bread Pan For Baking Gluten
I test baked this gluten-free bread in two different types of bread pans. I used both a 9-inch x 4-inch Small Pullman loaf pan and a Wilton 9-inch x 5-inch non-stick pan.
I highly recommend using the 9-inch x 4-inch small Pullman loaf pan with this recipe. The Pullman loaf pan has a narrow bottom with steep, high sides and a ridged surface that gives gluten-free bread dough the extra support to help it rise the best. I did not use the lid in this recipe. I only bought the Pullman loaf pan.
If you bake the gluten-free bread in a 9-inch x 5-inch bread pan, it will not rise as high because the pan is larger than the Pullman loaf pan. Even though it does not rise as high, it still as delicious!
Products I Recommend For Gluten
For flours: I recommend Arrowhead Mills or Bobs Red Mill. Ive tested this gluten free bread with both brands with great success.
For psyllium husk powder: I use Kate Naturals Organic Psyllium Husk Powder.
For olive oil: My absolute favorite olive oil is Jovial Foods. The flavor is so lovely, and really tastes incredible in the bread!

Is This Homemade Gluten Free Bread Suitable For Bread Machines
While theyre designed to make life easier, I cant recommend using a bread machine for this gluten free white sandwich bread recipe.
Again, its not because Im a fan of more work. Rather, Im a fan of consistent results, and you just cant achieve that with a bread machine. There are simply too many different models of bread machines to tailor this recipe, so I say skip the machine for best results.
Tips For Baking Gluten
- Make sure you have fresh yeast .
- Always use room temperature ingredients! Yeast thrives in a warm environment.
- You can bring your egg whites to room temperature by pacing the whole large eggs in a bowl of really warm water and let them sit for 5 minutes.
- Always use gluten-free non-stick cooking spray to grease your pan and the plastic wrap. I like either coconut oil or olive oil cooking spray.
- Bake the bread on the middle rack.
- I also like to bake my bread horizontally for even baking.
- Remove the loaf from the baking pan and place it on a cooling rack. If the bread cools in the pan, the steam can get trapped and the loaf can get soggy, especially on the bottom.
- Use a serrated knife to slice the bread. Using a smooth-blade knife can squish the bread.

Can I Freeze Gluten
Yes, you can freeze this gluten free bread loaf. After it has completely cooled, slice the loaf into equal slices. We like to place a piece of parchment paper or in between each slice, so it’s easy to pull it out of the freezer.
You can either defrost the bread in the microwave or you can let it sit at room temperature until it has thawed.
Artisan Style Gluten Free Bread
By Eric Rusch
I had given up on baking good gluten free bread at home until I found this gluten free bread flour mix. It uses no gums, doesnt require eggs, and allows you to make a crusty, artisan style loaf of bread that comes as close as Ive experienced to regular wheat bread.
After aggressively vetting this recipe with a number of gluten intolerant friends, we decided it was time to launch a gluten free section on Breadtopia to showcase this flour along with its sister gluten free all purpose flour mix to cover most gluten free baking needs.
The loaf of bread in the video below is a simple enriched bread. You can make 3 medium artisan-style loaves from a 2 lb bag of flour.
If you decide to make sandwich bread in a loaf pan, you should scale up the recipe by 1.5 to 2 times, depending on the size of your pan and how much you want the bread to crest over the rim of the pan.

Take a look at these factors before buying recipes for gluten free bread:
What Does Gluten Free Mean
A gluten free diet is a way of eating where foods containing certain grains are eliminated. This is primarily wheat, barley and rye.
Some foods that usually contain these gluten-loaded grains can be made using substitute flours and grains.
These foods are described as gluten free and are suitable and safe for people with a gluten intolerance, gluten allergy or coeliac disease.

Easy Gluten Free White Sandwich Bread Recipe
Picture the gluten free white sandwich bread youve been missing in your life, and know that the wait is over. Its that simple.
This soft and tender bread bends and squishes and tastes like the real thing, and it has a lovely bakery-style crust to boot.
Use it for yummy sandwiches, grilled cheese, or classic peanut butter and jelly. You can toast it for a bit of crunch, or if youre craving something sweet, sprinkle on a bit of sugar and cinnamon. This gluten free sandwich bread is incredibly versatile just like bread should be.
Mixing The Ingredients And Kneading The Dough
First, mix the yeast and sugar with some warm water to activate the yeast. After 5 10 minutes, it will become bubbly and frothy, which means that the yeast is active. If theres no bubbles and/or foam formation, youll know that its inactive and you should open a new yeast package.
Next up, prepare the psyllium gel by mixing the psyllium husk with some water. The gel will begin to form within seconds.
Now, we come to the mixing and kneading stage theres really no right or wrong way to knead gluten free bread, as you dont have to go though the stretching motions youd typically use to build up the elasticity in a gluten-containing wheat bread.
Once the wet and the dry ingredients are combined, I tend to squeeze the dough through my fingers until smooth and homogeneous. After a few minutes youll notice the dough coming away from the sides and it will be easy to form it into a rough ball.
While it wont have the same super-stretchy elasticity of a gluten-containing wheat dough, theres enough elasticity there that you can stretch portions of it without them breaking off.
Once you complete one 360 degree rotation of the dough, you should be left with a ball of dough. Flip it seam side down and rotate in place to seal the seams.

How Do You Activate Dry Yeast
I use Bobs Red Mill active dry yeast for this recipe. This bread recipe has been developed to use an active dry yeast, as opposed to instant yeast. You could try using instant yeast in this recipe, but I have not tried it, so experiment at your own risk!
To activate active dry yeast, youll mix it with warm water and some sugar. For this recipe, I used maple syrup. Youll do a quick stir to combine, and then let it sit for 10 to 15 minutes. In that time, you should see it start to bubble, and then it will get nice and foamy on top. If this doesnt happen, retry with new yeast and water. If the yeast doesnt get foamy and bubbly, it means it isnt active and it wont help your bread rise.
Whats the difference between active dry yeast and instant yeast? Active dry yeast must be activated by warm water before use, usually along with some kind of sugar to help feed the yeast and get it nice and bubbly. Instant yeast is mixed directly into the dry ingredients and is activated when the dough is mixed together. I find it easier to troubleshoot with active dry yeast because if your instant yeast doesnt activate, you need to restart the whole recipe.
Pro Tip: How To Measure Gluten
As with all baking, I recommend using a kitchen scale to properly measure your gluten free flour. This is because using US cup measurements, while Ive provided those measurements, is just not as accurate.
Even measuring the flour properly using the spoon and level method can still not be as accurate as using a kitchen scale. This will ensure that you get the same gluten free bread over and over again. Ive personally made this recipe upwards of 10 times with the same results each time.
You can purchase a kitchen scale via Amazon for just $10. Ive used a $10 one for years before punching my OXO kitchen scale . Youll use it over and over again for all of your baking needs. Plus, no need to clean tons of measuring cups!

Storing Gluten Free Sandwich Bread
This easy gluten free bread recipe produces incredibly tender bread that stores easily on the kitchen counter. Just keep it sealed in an airtight container, and it will last for at least 2 days.
I also recommend that you dont pre-slice the bread before use. Doing so may cause it to dry out prematurely, so leave the loaf whole and slice as needed.
How To Know When Gluten
I highly recommend using an instant read thermometer to check the temperature when baking gluten free. Typically, the bread will look done before its actually done adequately baking.
If you pull the bread too soon the liquids wont have time to evaporate and it will be gummy and dense, instead of soft and fluffy.
The internal temperature should reach 205ºF. Checking quickly with an instant read thermometer will help the bread retain valuable heat while the temp is being read. A Thermoworks Thermapen does this efficiently and accurately.

Can I Make It Vegan
Gluten-free bread can be made without egg but bear in mind that without gluten these gluten free-flours do need a binder to help gel the ingredients together. The most popular plant-based binder is a powder called psyllium husk, as a rule of thumb youd use about 5% of the dry weight but youd probably have to make the recipe several times to adjust it to a consistency you like. This is usually hydrated along with whatever liquid you are using before being added to the dough. It will turn the liquid into a gel.
Flax seeds and chia seeds are also helpful as a binding agent in place of eggs, as is aquafaba and agar agar .
How To Create A Steam Oven At Home
Most bakeries bake their breads in steam ovens. Steam ovens release steam at the right time when breads are baked. Again, I took a page from Gluten Free Artisan Bread in Five Minutes a Day. Take a shallow pan, such as an old broiler pan, and put it on the bottom rack of your oven. Put a baking steel or baking stone on the middle rack and preheat the oven to 450 degrees.
When the dough has fully proofed, slash it with a wet, sharp bread knife or lame . You can be creative with your slashing as well. Slide the shaped bread into the oven, parchment and all, onto the steel . If you dont have a steel or stone, an overturned baking sheet will do in a pinch.
Carefully pour a cup of hot tap water into the broiler pan, which creates instant steam. Quickly shut the oven door to keep the steam in. This allows the bread to gain its initial rise in the oven before the crust begins to set.
