Since we are in the week between Passover and Easter, its time to bake a basic unleavened flatbread. This bread is commonly eaten during this week when leavened bread for the Jewish is not consumed. However, in many cultures this bread is eaten year-round. For religious reasons or not, a basic unleavened bread is simple and quick to make to accompany any meal.
Given the season, unleavened bread has its religious purpose. There is symbolism behind it whether you are Jewish, Christian, or other religion where unleavened bread is consumed. Unleavened bread, simply put, is bread without any raising agent like yeast, baking powder, or baking soda that would cause the dough to rise.
In the Bible, leavening such as yeast represents sin. Therefore, its counterpart, unleavened bread, represents simplicity and purity for the Jewish and Christian faiths, whether during Passover or for communion. Its a reminder of the sacrifices made, and the need to eliminate sin from daily lives.
Recipe Tips For Getting Perfect Passover Matzo //
- Find your favorite flour. While a certified kosher all-purpose flour is traditional, feel free to test this recipe with different flours. Whole wheat flour or gluten-free flours like spelt, chickpea, or almond flours can also work well. .
- Use room temperature water. While cold or warm water will work, Ive found the best matzo texture using room temperature tap water. I fill a measuring pitcher with water 20 minutes before baking. That way its had to time adjust to room temperature before I mix it with the flour.
- Flour is your friend when kneading. Is your matzo dough too sticky? Add more flour. Is your dough sticking to your counter or rolling pin? Add more flour. Dont be afraid of flour, but make sure the dough isnt too dry before baking.
- Keep an eye on the oven. Because matzo cooks up quickly, keep your eye on the oven or it will easily become too brown and overcooked.
- Use 2-3 baking sheets. If youre making matzo according to the 18-minute kosher rule, having 2 extra baking sheets will speed up the process. Have one in the oven, one prepped, and one backup. You can let one sheet cool when you remove it from the oven. .

- Preheat the oven to 400°F.
- Combine the flours and salt together.
- Mix the olive oil, honey and water together and pour over the flour mixture.
- Mix until the dough is formed.

- Cut into whatever shape you like small or large circles, small squares or rectangles.
- Bake for 15 minutes on baking sheet.

Preheat your oven to 5ooF. Have 3 baking sheets ready.
3 cups of all purpose, flour or bread machine flour
1/2 tsp. celtic sea salt
3 tbsp. virgin olive oil
1 cup of water
Mix flour, salt, and oil. Add water and start your timer . Make a thick dough. Knead briefly until dough is smooth and elastic. If you want them Kosher for Passover, youll want to keep going here, but if not, you can let the dough rest for 15 minutes before proceeding. This makes it easier to roll thinly. Divide into 16 balls, about the size of a walnut. Roll into thin 7 inch circles. They should be paper thin and you will see the colour of the counter top peaking through the opaque dough, when they are thin enough. Place on ungreased baking sheet. Poke thoroughly with a fork, or rotary tool made for the purpose. Bake in 500F oven for 3 minutes. Flip and bake on the other side for about 2 minutes. Watch them carefully as they burn easily. You want the surface to blister, with speckles of brown on the blisters. Remove from heat and cool individually on a cooling rack. As you take each baking sheet out of the oven, put a fresh baking sheet in.
Alternatively, if you prefer a rectangular shape to your Matzos you can use a noodle roller to get the dough thin. Then prick with a fork and bake as above.
If you are going to be making a lot of Matzo consider investing in a dough perforator and a pasta machine, two tools to make the job easier, and faster.
Does Unleavened Bread Have Oil
Since the scriptures do not indicate whether the children of Israel were to use oil or other specific ingredients besides the order of no leaven Perhaps, each household prepared unleavened bread in their own way as long as they didnt use any leaven.
