This is a surprisingly simple recipe to make. You dont need a bread maker, stand mixer, or a fancy bread pan, just a mixing bowl, a spatula, a whisk, and a baking sheet.

  • Whisk together the water, honey, and yeast. Let the mixture sit for five minutes so it can become frothy.
  • When the yeast mixture has activated, add the flours, beaten egg, olive oil, salt, and vinegar.
  • Stir the mixture using a spoon or spatula until a dough has formedbut dont overmix, or youll create a tough bread.
  • Cover the bowl with plastic wrap and set it in a warm location for 30-60 minutes to give the dough time to rise. It is ready when the dough smells yeasty and looks puffy.

    Besides at the end of the week, we always seem to have some ripe bananas in the house so freshly baked bread is the perfect use for them.

    This recipe is from my mom and it is one of those super simple recipes that adapts so well to dietary needs and preferences.

    The original recipe was obviously not gluten-free, so with this gluten-free version we used GF Jules All-Purpose Gluten Free Flour. , which has been our go to gluten-free flour for years as it is easy to substitute 1 for 1 in non-gf recipes. And we added some baking powder and reduced the baking soda so that the loaf was still light and fluffy.

    How To Make Gluten Free Dairy Free Banana Bread

    If you need a dairy free option, in place of butter, try using vegan butter. My favorite brands are Melt and Miyokos Kitchen. You can also try virgin coconut oil . Raw, unrefined coconut oil is a great choice for a dairy free option, as it beings a very slight hint of nuttiness or coconut flavor to the bread.

    You can also try Earth Balance buttery sticks, but they have more moisture than butter. You may need to add another tablespoon of gluten free flour to make the batter the proper consistency.

    In place of sour cream, I highly recommend Anita brand plain coconut milk yogurt. Otherwise, any plain, nondairy, gluten-free sour cream alternative should work just fine.

    Which buckwheat flour works best? Store-bought buckwheat flour can vary drastically in taste and color. Some brands will have a blue-gray hue, and a more bitter taste, while others are more lightly colored with a mild flavor. I tested this recipe with Anthonys organic buckwheat flour, which is on the lighter side. You can also make your own buckwheat flour by grinding buckwheat groats in a blender or coffee grinder.

    Can I replace the oil? Instead of olive oil, you can use melted coconut oil or butter. Keep in mind that these two options become solid when chilled, so the bread wont feel as moist when it cools. For an oil-free option, you can most likely swap the oil for applesauce or extra banana, but it might affect the texture slightly.

    Can I use maple syrup as the sweetener? Ive tested this recipe with a 1/2 cup of maple syrup instead of the granulated sugar, and the texture is a little more solid and gummy. If you dont mind a different texture, feel free to experiment with it! You can also use any other granulated sugar you have on hand, but if you use white or brown sugar, Id reduce the amount you use to only 3/4 cup, since they are sweeter than coconut sugar.

    In a separate bowl, mash up some overripe bananas and measure out 1 cup. Its important to use exactly 1 cup of mashed bananas for the right texture.

    This recipe also doubles great. The recipe takes about 2 ½ bananas per loaf. So if you have 5 over-ripe bananas sitting around make two loaves! Nobody at my house complains when I do that!

    • In a large mixing bowl, add the shortening and sugar. Beat with an electric mixer until fluffy
    • Add the eggs, a teaspoon vanilla extract and almond milk and beat for 1-2 minutes until light and combined.
    • Add the ½ the dry ingredients to the wet ingredients and mix to combine.
    • Add half the bananas and mix to combine. Repeat with the other ½ dry ingredients and bananas. Fold in any mix-ins with a spatula.
    • Pour batter and smooth batter into the prepared loaf pan.
    • Bake for 50-60 minutes until toothpick inserted in the center of the loaf comes out clean. Cool 10 minutes in the pan then on a wire rack until fully cooled.

    Youll need roughly 4 large bananas for this recipe, and make sure they have lots of brown spots on their skin for the best flavor. I find its easiest to mash bananas with a fork on a plate, but you can also use an electric hand mixer to break them down quickly in a bowl.

    You should get about 1 3/4 cup of mashed banana from 4 large bananas. If you get slightly more or less, that should be okay, too.

    If you are working with smaller bananas, you may want to use an extra one to reach at least 1 1/2 cups of mashed banana for this recipe.

    Transfer the mashed banana to a bowl and add in the wet ingredients, like olive oil and eggs. Mix well.

    Then, add in the dry ingredients, like the buckwheat flour, coconut sugar, baking powder, cinnamon and salt. Use a spatula or electric mixer to mix until the batter looks smooth, and no lumps remain.

    3. Bake.

    • Egg replacement powder Id recommend using Orgran as its gluten free.
    • 1 tablespoon of chia/flax seeds mixed with 2 tablespoons of water and left for 10 minutes in the fridge.
