I love a good loaf of bread. So about 15 years ago when I was asked to teach a new class at the Culinary Institute of America that included gluten-free breads, I paused. After much trial and error, Ive learned a few things about making gluten-free yeast-raised breads. As a gluten-free bread baker, you have to develop your own level of comfort and make the formula adjustments that work best for you.
Here are tips from my gluten-free baking book that helped me find my level of comfort. Hopefully, theyll help you, too.

The Perfect Almond Flour Bread Recipe

This almond flour bread recipe is easily one of my best recipes ever!
This simple, grain-free, dairy-free, gluten-free almond flour bread is super easy to prepare and tastes absolutely incredible. Even if its your first time trying it out, you can expect results that look and taste professional.
A big issue with many gluten-free loaves of bread is that they are highly processed and not much better for you than most wheat bread. Even without gluten, these highly processed breads may still trigger inflammation or digestive distress.
After playing around with almond flour bread recipes for a few weeks, Im really happy with this recipe. Its similar to the texture of banana breadthick, dense, and ultra-satisfying.

How Do You Make Gluten Free Bread Rise Higher
There are several ways to make gluten-free bread rise higher. One way is to use a gluten-free flour blend that contains more leavening agents. Another way is to add an extra teaspoon of baking powder to your recipe. Finally, another way is to make sure that your gluten-free flour blend is properly activated. To do this, add an extra teaspoon of baking powder and make sure to use a light and fluffy gluten-free flour blend.
Pro Tip: How To Measure Gluten
As with all baking, I recommend using a kitchen scale to properly measure your gluten free flour. This is because using US cup measurements, while Ive provided those measurements, is just not as accurate.
Even measuring the flour properly using the spoon and level method can still not be as accurate as using a kitchen scale. This will ensure that you get the same gluten free bread over and over again. Ive personally made this recipe upwards of 10 times with the same results each time.
You can purchase a kitchen scale via Amazon for just $10. Ive used a $10 one for years before punching my OXO kitchen scale . Youll use it over and over again for all of your baking needs. Plus, no need to clean tons of measuring cups!

St Rise: Bulk Fermentation
For the bulk fermentation, place the dough into a lightly oiled bowl, cover with a damp tea towel and let the dough to rise for 1 hour in a warm place. It will approximately double in volume.
The purpose of the bulk fermentation is primarily flavour development this is what ensures that your loaf will have that wonderfully complex flavour we associate with properly baked bread.
How To Make Gluten
- This gluten-free bread recipe only has a few simple ingredients: gluten-free all-purpose flour, baking powder, instant yeast, honey, olive oil, apple cider vinegar, warm water, room temperature egg whites , and salt.
- Spray a 9x 5 bread pan or 9x 4 small Pullman loaf pan with gluten-free cooking spray. Move the top oven rack to the middle rack. Preheat your oven to 350°F.
- Add the gluten-free flour, baking powder, and instant yeast to a large bowl and stir to combine the ingredients.
- Add the olive oil, honey, and apple cider vinegar, and warm water to the flour mixture and mix on low for 1 minute. If you are using a stand-up mixer, use the paddle attachment, not the dough hook.
- Add the room temperature egg whites and the salt to the dough and mix on medium for 1 minute. The dough will look like a thick cake batter.

Why Was My Gluten
For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.
If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two, when making gluten free bread. Mixing it twice will always cause the bread to be denser.
Are you scooping your measuring cup into the flour? Or spooning the flours into the cups and then leveling? You should always spoon then level.
Otherwise, you’ll end up with more flour than you want which causes the bread to be dense.
Are you storing your flours in the freezer or refrigerator? If flours are stored that way they lose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

Vegan Brazilian Cheese Bread Recipe
Yields 12 servings
1 cup cooked Russet potato 2 cups tapioca starch 1 tsp salt 3 Tbsp unsweetened almond milk
1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
2. Pierce the potato with a fork and cook on the appropriate setting in the microwave until cooked and mashes well with a fork.
3. In a large bowl, combine tapioca starch, salt, garlic powder, onion powder, black pepper, turmeric, and nutritional yeast. Whisk to combine.
4. In a small bowl, combine boiling water, olive oil, and almond milk. Whisk to combine. Add the liquid mixture to the tapioca mixture with a wooden spoon or spatula, stirring until most of the dry ingredients have been incorporated.
5. Add the cooked potato and stir and mash with the back of the spoon until mostly incorporated. Then, using your hands, squeeze and knead the dough together until it becomes smoother. There will be some dry bits of dough, just press and knead them into the dough.
6. Scoop the dough by the tablespoon, and roll it into balls. It is helpful to squeeze the dough together a few times as you roll to make a cohesive ball. Space about an inch and a half apart on a baking sheet.
7. Bake for 32 to 35 minutes. The outsides should be dry, and the bottoms should start turning a golden brown . The tops of the cheese bread will not really brown at all.
8. Allow vegan Brazilian cheese bread to cool for a few minutes on a baking sheet. Serve warm. Best eaten the day they are made.
Can I Make This Recipe In A Bread Machine

Yes, you can! Even though I developed this gluten-free bread recipe to be an oven-baked recipe, I also tested it in my bread machine. Just swap out these ingredients for the ingredients in my gluten-free bread machine recipe and follow the recipes directions. I always recommend using a bread machine that has a gluten-free setting.

An Honest Disclaimer About This Gluten Free Bread
I’m not going to make any absurd claims: this is not to the standard of some of the master gluten free bread makers, such as Naomi Devlin or The Loopy Whisk.
But while their recipes are EXCELLENT, they use a lot of different flour blends and at the moment, getting hold of gluten free flours like this is just not realistic.
In fact, a lot of gluten free products are difficult to source so I have had to rely on my storecupboard at home.
So while this is not some gluten free artisan loaf recipe, what this IS, is a basic gluten free bread recipe which will suit your needs for a sandwich or slice of toast in the morning.
The best thing you can do is bake this gluten free bread recipe with enough time to give it 30 minutes to an hour to cool before you eat it.
This way you’ll still enjoy the warm dough and freshness from the oven.
If you can’t eat this within a few hours of baking it, I recommend using it for toast. I personally prefer all gluten free bread as toast, but this is where this loaf really comes into its own.

Now I’m no Paul Hollywood – all hail the King of Gluten – but I think I have finally, after many trials and tribulations, developed a gluten free bread recipe to get you through this lockdown!
Soft on the inside with a crunchy crust, this simple gluten free bread recipe is best eaten fresh from the oven, or toasted after that.
Can I Freeze Gluten
Yes, you can freeze this gluten free bread loaf. After it has completely cooled, slice the loaf into equal slices. We like to place a piece of parchment paper or in between each slice, so it’s easy to pull it out of the freezer.
You can either defrost the bread in the microwave or you can let it sit at room temperature until it has thawed.

A Note On Measurements
While Ive included the volume measurements in the recipe card below, if at all possible : USE METRIC GRAM MEASUREMENTS IF YOU CAN.
Theyre much more precise and produce more reliably delicious results. This is true for pretty much all of baking a kitchen scale will invariably give better results than cups and tablespoons.

Once proofed and doubled in volume:
Bake the dough with steam at 480 ºF for 20 minutes, then remove the tray with water, reduce the oven temperature to 450 ºF and bake for a further 40 50 minutes.

The Best Bread Pan For Baking Gluten Free Sandwich Bread The Pullman Loaf Pan
I had always wanted to try making it in a Pullman loaf pan. That was the only way to see if I could get those perfect, no-dome slices that are truly made for sandwiches.
Baking in a Pullman pan also tends to make softer bread. The moisture in the bread is trapped inside the pan during baking, and the bread absorbs it as it bakes.
The photo below is a loaf baked in a 2 pound Pullman loaf pan. The photo above is the bread rising in a 1-pound Pullman loaf pan.
You can make a 1-pound Pullman loaf, or a 2-pound Pullman loaf. The baking time is nearly the same, as the pans are much longer but also considerably more narrow.
Gluten Free Dairy Free Pizza
This gluten-free pizza recipe is already dairy-free. It uses olive oil. You can top this gluten free dairy free pizza crust with your favorite dairy-free cheese to make a gluten free dairy free pizza.
Another options is to leave the cheese off all together and brush on some dairy-free butter and sprinkle it with garlic salt, after its cooked.

How To Create A Steam Oven At Home
Most bakeries bake their breads in steam ovens. Steam ovens release steam at the right time when breads are baked. Again, I took a page from Gluten Free Artisan Bread in Five Minutes a Day. Take a shallow pan, such as an old broiler pan, and put it on the bottom rack of your oven. Put a baking steel or baking stone on the middle rack and preheat the oven to 450 degrees.
When the dough has fully proofed, slash it with a wet, sharp bread knife or lame . You can be creative with your slashing as well. Slide the shaped bread into the oven, parchment and all, onto the steel . If you dont have a steel or stone, an overturned baking sheet will do in a pinch.
Carefully pour a cup of hot tap water into the broiler pan, which creates instant steam. Quickly shut the oven door to keep the steam in. This allows the bread to gain its initial rise in the oven before the crust begins to set.
