How To Make Artisan Bread Dough

Easy Simple Whole Wheat Bread – Ready in 90 Minutes

Step 1: In a large bowl whisk together the flour, salt and yeast until combined.

Step 2: Pour in the room temperature water.

Step 3: Use a wooden spoon to stir the mixture until a dough forms. I usually switch to using my hands to make sure all of the flour has been incorporated into the dough.

Step 4: Form the dough into a rough ball and leave it in the bowl you mix the dough in.

Step 5: Cover the bowl with plastic wrap and let it sit at room temperature for at least 12 hours, even up to 18 hours, until it has risen.

PRO TIP: I usually like to make my dough in the evening, let it rise overnight and bake it the next morning.

Step 6: Towards the end of the rising time, preheat your oven to 475°F / 250°C and place a dutch oven with the lid on inside the oven to preheat as well. Once the oven is hot, carefully remove the dutch oven and remove the lid.

Step 7: Using floured hands, remove the risen dough from the bowl and shape it into a rough ball. Place it on a piece of parchment paper and carefully set it inside of the hot dutch oven. Cover the pot and place it in the oven.

Step 8: Bake the bread covered for 30 minutes.

Step 9: Remove the lid and let the bread bake another 15 minutes or until crusty and golden on top.

Step 10: After removing the bread from the oven, carefully remove it from the pot and allow it to cool on a wire rack.

Step 11: Slice and enjoy!

Which Yeast Is Best For Bread + How To Know When Yeast Is Activated

I get this question all the time in my cinnamon roll recipe and can understand why it may be confusing to know if your yeast is activated. First its important to know that there are two types of yeast to choose from. The first is an active dry yeast, which must be dissolved in liquid, or also whats known as being proofed before its added to the rest of the dough ingredients.

The second type of yeast is instant yeast, also known as quick rise yeast . Thats what we are using for this seedy healthy sandwich bread recipe. It can be added to the dough without proofing required. However, I still like to dissolve it in a little bit of milk to help get it started.

You can use either type of yeast in this recipe, just know that if you use active dry yeast, it may take the bread longer to rise. Youll know when the yeast is activated when you see a few small foamy looking bubbles start to pop up in the milk/oat/honey mixture.

How To Make Soft Whole Wheat Bread

Making homemade bread can often seem a little intimidating, but I promise you, this recipe is so easy. Itll have you making your own bread every week!

Start by dissolving your yeast in a little warm water. This usually takes about 5 minutes.

Once thats looking kinda frothy, throw in the honey and butter. Then add just 2 cups of the flour.

Beat that in for about 3 minutes, then gradually add in more flour until you see the dough forming a ball. Once that ball of dough is pulling away from the sides of the bowl cleanly, its time to knead.

You can knead this bread dough by hand, or let your mixer do the work for you. I kind of like kneading by hand. But sometimes Im too busy and I just leave it in the mixer so I can do other things. Either way will work!

After about 10 minutes of kneading, youll see that the dough looks really smooth and elastic. Just mist your mixing bowl with non-stick spray, pop in the dough, mist the top of that too, cover with plastic wrap and allow it to proof .

About 30 to 45 minutes later, youll see that the dough has grown to almost double what it was before. Punch it down, form it into a loaf shape, cover, and let it rise a second time.

Bake the bread until its puffy, golden brown, and gives a hollow sound when tapped.

How To Store And Freeze Bread

If your day gets away from you and you don’t have time to bake your loaves, just cover the bowl and place the dough in the refrigerator for up to 24 hours. Finish the remaining steps when you’re ready.

You can also freeze the dough after youve finished kneading it, but before you begin the first rise. Here’s what to do:

  • Place the dough in an oiled plastic bag, and try to remove as much air as possible, leaving just a little for expansion.
  • When youre ready to bake, place the frozen dough in a large buttered bowl. Cover and leave in the refrigerator for 24 hours. This will serve as your first rise.
  • Remove the dough from the fridge and bring the dough to room temperature on your countertop.
  • Punch down. Divide in half. Shape into loaves. Place into buttered loaf pans. Let rise again and bake as directed.

To freeze the baked loaves, allow the bread to cool completely. Wrap the bread in foil, then place it inside a zip-top bag. Remove as much air as possible.

The bread will keep in the freezer for up to three months. When ready to eat, transfer bread from the freezer to the countertop, keeping it in the wrapping. It will thaw in about 3 hours.

How To Know When The Bread Dough Has Risen

The shaped loaves are ready for the oven when they have doubled in size and you can touch the top or make a small cut with a paring knife without the dough collapsing.

If it collapses, the dough has over proofed. In this circumstance, you can do one of two things:

  • Bake it anyway and use it for strata, bread pudding, French toast, or croutons.
  • Or you can punch it down, and let it rise for a third time. The third rising doesnt always work, but given your circumstances, it might be worth a shot.

If all else fails, cry a little. Then start again. Its only bread. Chances are your family will eat it even if it isnt perfect.

How To Make No Knead Whole Wheat Bread

  • Mix Ingredients and Rest: In a big bowl combine whole wheat flour and all-purpose flour, salt and yeast. Pour the water into the bowl and using a spatula or a wooden spoon, mix it until its all incorporated. It will be sticky, so just mix until most of the flour is incorporated. Cover the bowl with plastic wrap and let it sit on your counter for 12 to 18 hours.
  • Preheat Oven and Pot: Preheat oven to 475°F. Add your Dutch Oven to the oven and heat it as well while youre prepping the dough.
  • Shape Dough: Flour your hands really well and and sprinkle plenty of flour over the dough in the bowl. With your floured hands gently remove the dough from the bowl, scraping at the sides first, adding more flour as needed and roughly shape it into a ball. Take the ball of dough and drop it directly into the pot or place it on a piece of parchment paper and grab the parchment paper with the dough and place it in the pot. Be careful not to burn yourself, the pot will be quite hot, so use oven mitts to handle it. Cover the pot with the lid and place it back in the oven.
  • Bake: Bake the bread for 30 minutes covered with the lid on, after which remove the lid and bake for another 10 to 15 minutes until golden brown. and crusty.
  • Cool: Remove from the oven, transfer to a cooling rack and let cool before slicing and serving.

    How To Make Whole Wheat Bread

    I have literally never come across a recipe as easy as this. Its just 5-ingredients, and you dont even have to knead it.

    In fact, kneading is out with this recipe. You just throw some whole wheat flour, instant yeast and a little salt to a mixing bowl.

    Then mix maple syrup with warm water and then add the wet ingredients to the dry.

    Mix in to just combine , move it into a greased loaf pan , cover it and leave it to rise for 20 minutes.

    It does all its rising before it even hits the oven. So the height it is when it goes in is pretty much the height it is when it comes out.

    Put it into the oven and bake for 40 minutes. And bingo you have freshly baked bread!

    If you dont have a cast iron dutch oven, you can use any oven-proof pot with a lid. The thicker the pot, the better job itll do at insulating the heat. And if you dont have a lid, simply cover it with foil or a sheet pan.

    Still interested in skipping the pot? Bake this bread on a sheet pan at 400° with a small loaf pan or square pan on the lower rack filled with about 1 cup of water. This water will help add moisture to the environment inside your oven.
