You see, when eggs bake, they release a lot of liquid. Chunks of crusty bread soak up some liquid so the casserole is chunky and textured, not flat and wet. If youre looking for something without this starchy addition, crustless vegetable quiche is a great option.
Prep The Veggies And Sausage
Cut the onions and bell pepper into small dice. You can use any color bell pepper in this recipe green, red, yellow, orange, purple whatever. I just happened to have a red one on hand.

This easy egg and sausage casserole is also a nice dish to make for brunch. You can even slow cook it in a casserole crock pot which will also keep it warm while serving.
The 9×13 crock for my slow cooker is also oven safe. So, I can brown up the cheese with the broiler after it’s done cooking if needed.
Why Do I Use Day Old Bread And What If I Use Fresh Bread

The advantage of using day old bread is that it has less moisture in it. When the casserole cooks you dont want a lot of moisture in the dish since it will end up steaming the eggs rather than letting them bake. It makes a difference in the flavor because steamed eggs dont have as pleasant a consistency as baked ones and as a result end up with less flavor.
So, if you are pressed to prep the casserole and you dont want to wait for the bread to dry out, then just give it a bit of help. You can set the bread in your oven or toaster oven and heat it up on very low heat, about 175 degrees f for approximately 20 minutes ought to do the trick.
You dont necessarily want the bread to cook, but you do want to dry it out.
