Why This Recipe Works
This simple casserole is full of flavor and extremely easy to prepare. Its a great breakfast option for Christmas morning or any holiday, but makes a delicious way to start your day.
Its extremely easy to make and versatile. Many of the ingredients can be swapped or changed to your liking.
This breakfast casserole is also very healthy and great for meal prepping. It freezes well whether you want to make it ahead or portion it out for busy mornings.
Do I Have To Use Bread
Bread or potatoes, yes. Besides eggs, bread is the main ingredient. To avoid a spongey, wet dish, this breakfast casserole needs structure at the bottom. You see, when eggs bake, they release a lot of liquid. Chunks of crusty bread soak up some liquid so the casserole is chunky and textured, not flat and wet. If youre looking for something without this starchy addition, crustless vegetable quiche is a great option.
Prep The Veggies And Sausage
Cut the onions and bell pepper into small dice. You can use any color bell pepper in this recipe green, red, yellow, orange, purple whatever. I just happened to have a red one on hand.
Remove the breakfast sausage from its packaging. Use whatever sausage you like best and as spicy or mild as you want.

Make It In The Crockpot
This easy egg and sausage casserole is also a nice dish to make for brunch. You can even slow cook it in a casserole crock pot which will also keep it warm while serving.
The 9×13 crock for my slow cooker is also oven safe. So, I can brown up the cheese with the broiler after it’s done cooking if needed.
Why Do I Use Day Old Bread And What If I Use Fresh Bread
The advantage of using day old bread is that it has less moisture in it. When the casserole cooks you dont want a lot of moisture in the dish since it will end up steaming the eggs rather than letting them bake. It makes a difference in the flavor because steamed eggs dont have as pleasant a consistency as baked ones and as a result end up with less flavor.
So, if you are pressed to prep the casserole and you dont want to wait for the bread to dry out, then just give it a bit of help. You can set the bread in your oven or toaster oven and heat it up on very low heat, about 175 degrees f for approximately 20 minutes ought to do the trick.
You dont necessarily want the bread to cook, but you do want to dry it out.

Angela’s Tips & Recipe Notes
- Add some sauteed onion! If you prefer onion in place of onion powder, use a splash of olive oil and sautee some white onion over medium-high heat, then add the sausage to the pan with the onion as it browns. Alternatively, dried minced onion can be added while you brown the sausage.
- Wait to add pepper! If pepper is desired, add it upon serving. Black pepper can turn eggs an unsavory grey color if added before they are cooked.
- Storing: Store leftovers in an airtight container in the fridge for up to 4-5 days, or freeze for up to 2 months.
- Reheating: Reheat individual slices in the microwave in 30-second increments until hot. To reheat the whole casserole, cover it with foil and place it in the oven at 350°F for about 20 minutes.
Can You Freeze Unbaked Tater Tot Casserole
Absolutely! This is a terrific make-ahead freezer meal. Just like preparing overnight, assemble the dish but do not bake. Pro Tip: I recommend that you prepare the casserole in an aluminum pan that can easily go from the freezer to the oven.
Wrap the pan in a layer of plastic wrap, then in a layer of aluminum foil. Freeze for up to 3 months. Thaw in the fridge overnight and bake according to the recipe instructions.

Many moons ago, Barbara went to Purdue University where she lived in Cooperative housing with a large group of girls. The house, called Glenwood Cooperative, was run by these girls who shared cooking and cleaning duties.
Barbara has a ton of great recipes from her Glenwood days, including this Egg and Sausage Breakfast Casserole.
She actually made it on a whim because she had a bunch of white sandwich buns left over from a birthday party. I think our Grandma Kuhn would be proud of her for not wasting them.

Discovering exactly how to make easy scrambled eggs can be fun! Spice up this very easy egg favorite by including pepper jack and salsa or lighten it up by substituting food preparation spray as well as water for the butter and also milk. Eggs clambered in a cast iron frying pan can transform a greenish shade. This unattractive however safe shade adjustment is the outcome of a chemical reaction in between iron in the pan and also sulfur in egg whites. The heat retained in the frying pan will certainly continue to firm and also cook up the eggs after frying pan is gotten rid of from warmth. The length of time to beat? Its a matter of preference. Can I Use Potatoes
Yes, you can replace the bread with diced hash brown potatoesthe kind you find in the freezer section of the grocery store. Guests have *loved* this version. Use about 3 cups of hash browns in place of the bread. You could also peel and dice fresh potatoes, but youll need to quickly cook them on the skillet for 10 minutes before using in this dish.
What Is The Advantage Of Setting The Casserole Up In The Fridge
The overnight egg casserole, also sometimes referred to as an egg bake too, takes advantage of the time it sits to let the wet ingredients absorb properly into the day old bread. You dont necessarily have to let it sit overnight, but it helps the dish look, feel, and taste more like a casserole and not just like eggs and toast.

How Do I Reheat An Egg Casserole
You dont need a lot of time or heat to bring your egg casserole back to life. Baking at 250-275 F for about 15 or 20 minutes will do the trick without drying it out.
It is actually good the next day cold right out of the fridge as well.
You can keep it in the fridge, properly sealed, for about 3 to 5 days. You can also freeze some slices and save them to reheat in an oven or microwave. The microwave is less ideal because it does change the texture of the eggs, but when time is at a premium and you just want something easy to heat and eat, then that will never be an issue.
