Grandma’s Sour Cream Banana Bread – How to Make

Pop the bread into the oven, and allow it to bake for about 1 hour to 1 hour 15 minutes you’ll know it’s done when it’s golden brown, and an inserted toothpick comes out clean . While it will likely take at least 1 hour to bake, Morone does advise to “start checking the loaf in the oven at around 55 minutes for doneness.”

Once it is done, remove the bread from the oven, and let it cool down completely. Then, slice it up, and serve as desired. “This is a great bread to have for breakfast, or as a snack,” Morone says. “You can spread things like butter, Nutella, or peanut butter on it to make it even more delicious.”

Other Banana Bread Ingredients

  • Butter: Use softened butter for a soft texture and irresistible butter flavor.
  • Brown Sugar: Use all brown sugar in this recipe. In the headnotes for this chocolate chip cookies recipe, I explain that brown sugar yields soft and moist cookies. Well brown sugar works that same magic in banana bread, too. It also adds wonderful flavor.
  • Eggs: Eggs supply cakes, cupcakes, breads, doughs, and cookies their stability and structure, as well as a tender texture. Youll need 2 large eggs for this.
  • Sour Cream or Yogurt: Sour cream or yogurt adds even more moisture to this banana bread.

For banana nut bread, add 3/4 cup of chopped nuts to the banana bread batter I like using either pecans or walnuts. If youre nuts for nuts , youll enjoy the toasty slight crunch nestled inside the soft crumbs. If youre not a nut person, feel free to leave them out or replace with chocolate chips. Can You Freeze Banana Bread

Absolutely! I froze the banana bread cake layers well in advance for the wedding.

To freeze, remove the bread from the pan and allow to cool completely. Then double wrap in plastic wrap and foil. The bread will keep for up to 3 months.

To thaw, remove the sour cream banana bread from the freezer and place at room temperature for 6-8 hours.

Can Bananas Be Frozen For Later Use

Even after I bought 25 bananas to test the recipes for this post, I still needed more bananas believe it or not. Good thing I have been saving over ripe bananas in my freezer for literally years! Heres what I do: when you have brown bananas on the counter but dont have the time or inclination to make banana bread right away, peel them and freeze in a ziplock. If you have a whole bunch, you may want to lay them out on a baking sheet and flash freeze for an hour, then transfer to a ziplock. You can also freeze bananas in their peels, Ive done that before. Just zap them in the microwave when you need them, then peel and use them for bread or whatever.

When you use frozen bananas for banana bread , you will have to microwave it long enough to be able to mash it. When you microwave it, a bunch of liquid will melt off of the banana. Dont throw it away! Add it to your banana bread. It will make your bread extra moist!

How Long To Bake This Banana Bread With Sour Cream

If you use ripe bananas that you grab from the kitchen, you will need to bake the bread for an hour. However, if you use very ripe bananas or frozen ones, then thawed, you will have to bake the bread for 10 minutes more.

These bananas contain more moisture, and the bread will need to bake longer in the oven. Use a wooden skewer to check the middle of the bread by sticking it in the center of the loaf.

It should come out with just a few crumbs. If the batter is wet, allow the bread to bake for a few minutes more.

How Ripe Should Bananas Be For This Recipe For Banana Bread

Okay, word on the street is that the more ripe the banana, the better. Like one expression I stumbled on said, A banana bread banana isnt yellow its black.

I disagree. Ripe, yes. Spotted brown or streaks of black, definitely. Completely black, no. I dont enjoy the overripe smell, for one thing. This is a personal preference and smell might be your best bet for figuring out what you like. You want to use the bananas before they have that trace of smell your nose identifies as rotten. No thank you!

    How To Ripen Bananas Quickly

    Best Banana Bread Recipe

There is a hack to ripening bananas at home. If you dont have brown bananas, you have two options: you can use regular yellow bananas and just mash them up really well. If you do this, increase the brown sugar by about 1/4 to 1/3 cup and add a pinch more salt. The other option is to line a pan with foil, turn your oven on to 300 degrees F, and bake yellow bananas for about 15 minutes until the peels are black. Let cool completely and then use for banana bread!

How To Make Banana Nut Bread

  • Preheat oven and grease loaf pan.
  • Add bananas to a mixing bowl and mash.I dont use anything fancy here, just a fork. If your bananas are ripe enough to make banana bread, theyll be soft and easy to mash.
  • Stir in butter, sugar, eggs, and vanilla. Stir in sour cream. I found using full-fat sour cream produced the best tasting bread.
  • Stir in baking powder, baking soda, and spices. I like to use both baking powder and soda, as I feel it gave the best texture and rise with a nice rounded top.
  • Add flour and stir until combined.Just stir until you dont see any streaks of flour anymore.
  • Stir in walnuts. Again, just stir until theyre incorporated, you dont want to over-mix the batter.
  • Transfer batter to loaf pan and bake. This bread, like most quick breads, takes about 50 minutes on average. Mine usually takes about 47 minutes, but just check it to see if a toothpick inserted in the center comes out clean or with just a few moist crumbs.
  • Let cool in pan, then on wire rack.As tempting as it is to dive in while its warm, its best to let it cool at least an hour before slicing.

    Variations Of This Recipe

    • CHOCOLATE CHIPS chocolate chips are fabulous in this bread! Add about 1/2 cup.
    • OIL if you prefer, or dont have any butter, an equal amount of vegetable oil can be substituted.
    • SPICES feel free to play around with the amount of the cinnamon and/or nutmeg in this recipe. In fact, if youre out of those spices, this bread is still yummy without them.
    • SUGARS for a more caramel-y flavor, try swapping half of the granulated sugar out for brown sugar!
    • GLAZE try making a simple glaze out of 1/2 cup powdered sugar and 1-2 Tbsp of cream , then drizzling it over the bread.

    Start By Mixing Various Ingredients

Worlds Best Sour Cream Banana Bread

Kick things off by preheating your oven to 325 F, then use either cooking spray or butter to grease a 9-x5-inch loaf pan. Grab a clean bowl, and whisk together the flour, baking soda, and salt. Grab a separate, large-sized bowl, and add in the olive oil, brown sugar, and granulated sugar, mixing to thoroughly combine. Then, to that large bowl, mix in the mashed bananas, eggs, vanilla extract, and sour cream until combined.

    Banana Bread Tips And Tricks

    • When you make a banana bread that has really moist ingredients you really have to bake it long and lower than usual.
    • A lot of banana bread recipes are baked at 375°F, but I like to lower mine to 350°F. You reduce the risk of cooking the outside and having a raw inside.
    • Check in multiple places for doneness, not just the very middle! Make sure its DONE!
    • Cover the banana bread lightly with aluminum foil to prevent it from being too dark on the top. I generally cover mine when I see that its getting brown, then take it off at the end to make sure it browns up perfectly.

    The Recipe Comes Together Quickly

I mentioned earlier that I tried many banana bread recipes when developing my own for Weeknight Baking. Some of the recipes I tried were unbelievably fussy: some instructed you to brown butter, caramelize bananas with sugar, others instructed you to boil them down into a syrup. While they were delicious, they werent actually any MORE delicious than this easy banana bread recipe.

This banana bread recipe is SO easy that it comes together in just 15 minutes. Theres no need to do anything special to the ingredients beyond throwing them in the mixer bowl. In fact, if youre using super ripe bananas, you dont even need to mash themthe mixer does the job for you!
