Making Cloud Bread Without Cream Of Tartar
If you are like me, cream of tartar is not a staple in your spice cabinet. When I went to make these oopsie breads for the first time I had to go out to the store and buy some cream of tartar because the one we had in our kitchen had expired 5 years ago.
If you dont have any at home, thats ok. You can replace the cream of tartar with baking powder in your oopsie bread recipe, which is something that is in most kitchens and up to date because it is used more often. The baking powder does a good job in keeping the egg whites firm too.

Storage And Reheating Instructions

This cloud bread can be stored in a sealed container and in the fridge for 2-3 days or up to 3 months in the freezer. Dont forget to put a layer of parchment paper between each bread to avoid them from sticking together.
You can simply thaw it at room temperature or in the fridge and reheat them in the oven at 300°F for 5 minutes.

Low carb cloud bread is definitely something Ill make again. Its a good easy substitute for bread and I like that you can flavor it with different seasonings and ingredients.

Cloud bread is a low-carb bread alternative made of eggs, cream cheese, baking powder, and flavorings. It has a light and fluffy texture, and it is loaded with protein and fats. With only 4 ingredients and a cook time of 25-30 minutes, cloud bread is an excellent choice for anyone on a low-carbohydrate diet.
As you can see, it is a special type of bread, also known as oopsie bread or oopsie roll. It is circular in shape, with each slice baked separately. Each slice has a light, airy texture but remains reminiscent of a regular loaf.

Yes the cloud bread is low carb. When you look at the list of ingredients you can see why this is the case. In fact each piece of low carb cloud bread is only 0.6 NET Carbs per serving.
That is really incredible because you can have a sandwich with it for breakfast or lunch and still stay perfectly in range with carbs for the meal. It also makes a good keto afternoon snack with some butter spread all over it.

What Does Keto Cloud Bread Taste Like
Keto cloud bread has a neutral taste and it is very light and airy. Some people say that it tastes a little eggy but many dont notice an egg flavor at all.
If you are looking for more flavor you can certainly add some garlic powder or onion powder in the batter or you can even add your favorite spices or herbs on top like you would a bagel.

The Cloud Bread Company Cloudies Are Light As Air

Apparently, I missed the entire #cloudbread TikTok/internet sensation. When I recently attended a Nourished Festival presentation by The Cloud Company, their spokesperson said the company started making Cloudies Cloudbread because so many people had a difficult time making cloud bread at home. Although I personally never jumped on the keto train, I am always interested in trying new food products. After trying The Cloud Bread Company Cloudies, I can see why they are so popular!
The Cloud Company makes three varieties of Cloudies:
The basic ingredient list for these Cloudies is simple: eggs, cream cheese, baking soda, and baking powder. Cloudies are found in the freezer aisle to preserve freshness as they contain no preservatives. They are gluten-free, have zero carbs and are only 35 calories each.
Cloudies can be defrosted in the refrigerator or the microwave and then toasted. When I tasted one, I could not believe how fluffy and bread-like the texture was!
I made a breakfast sandwich by tucking some scrambled eggs and baby spinach between two Cheddar Cloudies. I would also like to try using Cloudies instead of buns the next time we have turkey burgers for dinner. Other suggestions include using Cloudies as the base for tostadas, mini pizzas, or even a strawbery cloudcake!

How long does cloud bread last? If youre keeping your cloud bread at room temperature, itll last about 3 days. If you keep it in the fridge, more like a week! You can even freeze your breadswe recommend freezing them flat in a resealable plastic bag with parchment paper between each piece.

What Makes Cloud Bread So Great
So, you might be wondering, why anyone would use it over regular bread.
Apparently, cloud bread came about during the height of the Atkins diet. For those who dont know, the Atkins diet involved eating very low amounts of carbs to force your body into a state called ketosis. In this state, the body burns ketones stored in fat, therefore forcing you to lose weight. Due to the lack of carbs, those on the Atkins diet eat lots of protein.
Nowadays, the Atkins diet has fallen out of fashion to be replaced with the Keto Diet. The difference is that those on the Atkins diet dramatically cut out carbs and then gradually increase their carbohydrate intake again over time. The keto diet is more permanent, and you eat a low-carb diet all the time.
Both diets are about weight loss. Although the long-term weight loss benefits of the keto diet are up for debate now, it still remains quite popular.
Not being able to eat carbs means that youre seriously limited with what you can eat you can kiss goodbye to sandwiches!
Cloud bread solves this issue because its virtually carb-free. There is no flour whatsoever, not even a low-carb flour like almond flour. As a result, those on low-carb diets can enjoy it which is sometimes called keto cloud bread without worry.
It also solves the high-protein issue. Thanks to the egg whites and cream cheese, its relatively high in protein.

By taking egg whites and beating them stiffly and popping them in the oven you can create an un-bread that will hold up well to sandwiches . These can be made with cream cheese or yogurt. I personally love the addition of Greek yogurt partly because it tastes great and partly because I always have it on hand. Yes, this bread is light and fluffy and it does have a slightly eggy taste . Plus this bread is WW friendly and 21 day fix approved and can even be enjoyed if youre following the Medifast Diet.
Cream of Tartar is a fine white powder found with the baking supplies or online. The purpose of the cream of tartar is that its a stabilizer and helps the eggs hold their shape . I dont use it very often so I usually buy it in the bulk area of the store in small quantities but you can also get it online. Before baking feel free to sprinkle with your favorite herbs or a pinch of seasoning.
Once cooled completely, this bread freezes well. It can be toasted BUT you have to watch it very carefully. The first time I tried toasting Cloud Bread, I ended up with ashes. 🙂 It only takes a few seconds to toast so keep a close eye on it or it will burn.

How To Make Cloud Bread:
Pre-heat your oven to 300 F.
Beat the whites and cream of tartar on high until the froth becomes a meringue.
From my experience, beat it for 5 minutes, stop for 10 seconds. Start beating again and the peaks will start to form. Beat for 3 minutes, stop for 10 seconds. The peaks will be almost perfect right now. Beat for one more minute.
Spoon the meringue into a separate bowl.
Beat the cream cheese a little to soften it. Smooth cream cheese is your goal. If its chunky, those chunks will be in your bread. They wont melt. And those bites distract from the actual bread itself.
Add in the egg yolks, one at a time, and beat on high until combined.
Add in your seasoning and beat again.
Fold in your meringue .
Put a silicone baking mat on a cookie sheet.
Scoop 1/4 cup of the batter and use it to make 5-inch circles. Dont try to add to it after its formed.
Continue until all the batter is used. It should make about 15 pieces of bread.
Bake about 28 minutes until the outside is golden brown .
Let the bread cool completely before even thinking about it. If you touch it too soon, it will crumble. After it has completely cooled, it will get a springy feel to it and will slide right off the bake even sheet.
If you store this in the fridge, store it with parchment paper between each slice. If not, it will stick together in the fridge.
