If youve been following my blog for a while, you know Ive been doing gluten free and grain free baking for years, starting with paleo baking, and then moving to low carb and eventually keto. As much as baking is a labor of love, its also a science!

I dont use non-food foods. Because for me, the whole point of making a loaf of homemade keto bread rather than buying a loaf of keto bread is because I want to minimize additives, preservatives, and chemicals!

I dont use gums, such as guar gum or xanthan gum in my baking. Like a lot of people, xanthan gum gives me GI distress and so I just dont want to eat it.

And also, I use a minimum amount of different kinds of flours in my keto breads and keto baked goods recipes. Because no one wants to have to pull out six different types of flours to make one recipe, right?!

How To Make Low Carb Bread Whole Foods

Low carb bread is an excellent way to have a healthy bread that is low in carbs. The bread is whole grain which will provide a complete source of fiber, protein, and other nutrients. In addition, the low carb bread is made with almond flour, which will add protein and healthy fats. To make the bread, simply combine almond flour and water in a bowl, add yeast, and let sit until frothy. In a separate bowl, combine water and butter and let sit until the butter has melted. Combine the two in the bowl with the yeast and mix until all of the ingredients are well incorporated. Let the dough sit for 30 minutes. After 30 minutes, knead the dough on a flat surface for 15-20 minutes. Shape into a loaf and place into a greased pan. Let rise until the bread has doubled in size. Preheat oven to 350 degrees. Once the bread has risen, remove from the pan and brush with butter. Bake for 30 minutes. Remove from the oven and let cool.
